Planting a garden, even a small one, allows for a
‘greater degree of self-reliance. With the right
information and litle practice, individuals and
entire families can enjoy the many benefits of
planting and tending a garden.

Featured Storage Item of the Month: Oats
ats has been cultivated for over 5,000 years.
Cats are available in several forms. Oat groats
are the whole seed with only the outer hull |
removed. Rolled oats are the familiar breakfast
form. Steel cut oats are oats seed that have
been chopped into pieces. Quick Oats are rolled
steel cut oats, and instant oats are pre-cooked,
dried and flattened steel cut oats. The finest
form is as flour. Rolled oats can be stored for
30 years.
Regular and quick rolled oats are basically

Ground meat can be mixed with legumes, ground
turkey, cooked rice, or cooked wheat berries to
make it go further.
‘Orange Juice can be mixed with less expensive
lemonade, and it will make a delicious drink
‘Spaghetti sauce can be enriched with onions,
peppers, celery, zucchini, spinach, or other
vegetables
‘Take care of your produce. |f you see your
produce is reaching its peak, don't wait for it to
poll freeze itfirst. Citrus frut can be squeezed
and frozen before it goes bad. Green peppers
can be chopped and frozen. The same goes for
spinach, asparagus, and broccol.
For better storage of produce keep berries, citrus,
com on the cob, melons and peas near the front
of your shelves in the fridge where the temp. is
warmer. Apples, cherries, and grapes can go
‘anywhere provided they don't freeze.
Artichokes and asparagus should be stored with
tends cut and placed in water in the humidified
crisper unit of your fridge. Beets, brocooli,
cabbage, carrots, cauliflower, celery, chilies,
‘cucumbers, eggplant, lettuce, green beans,
mushrooms, and zucchini should also be stored
in the crisper.
Leave apricots, avocados, bananas, kiwis,
mangos, nectarines, papayas, peaches, pears,
plums, and tomatoes on the counter where they
are less likely to become subject to chill injury.
Store garlic, onions, potatoes and winter squash

Cook a Ig, roast, ham, chicken or turkey. Plan
several meals around what's left. Sunday's
chicken can become chicken tacos, quesadillas,
chicken salad, chicken casserole, & then the
carcass can be tured into chicken stock,
Chicken Stock. Take the remaining bones, skin
& fat and place in a large pot. Add a few carrots,
celery ribs and an onion. Sait & pepper ~ may
want to add other spices like oregano or thyme,
and bring to a boil and simmer for 4 ~6 hrs (or all
day in a crock pot. Strain the stock — use right
away or freeze for later.

the regular oats in water for about § minutes to soften.
Some recipes using oats:
Oatmeal Breakfast Packets (Makes 10)
In blender, blend 1 % cups of oats until powdery,

Homemade Granola
6 Cups uncooked oatmeat
Preheat oven to 325 degrees. Put oats in large
ungreased pan and bake for 12 min.

114 Cup sesame seeds, 1/4 tsp. salt, 1 Cup
coconut, 1/2 Cup chopped walnuts or pecans,
‘'Cup wheat germ, 1 Cup wheat or oat bran,
41/2 Cup light honey, 3/4 Cup brown sugar,
14/2 tsp. vanilla, 1/2 Cup slivered almonds,
413 Cup oil,
‘Add toasted oats. Mix well. Divide minture in halt.
Place in 2 large pans and bake for 30 minutes at
325 degrees, stirring often. Remove from oven
{add raisins, dates, dried apples, or other dried
fruit. Cool thoroughly. Store in tightly covered
containers.
‘OAT TOPPING
14/2 Cups rolled oats 1/4 C finely chopped nuts
1/3 Cup packed brown sugar 1/4 Cup coconut
113 Cup butter 4/2 tsp. cinnamon
Combine ail ingredients, mixing well. Cook in a
skillet over medium heat, stirring constantly, for 5
‘minutes or until golden brown. Serve over
desserts, fruit salads, yogurt, ice cream or
pudding,
