Master Chef Competition

Hello competitors, and welcome to MASTER


CHEF! I am Gordon Ramsey, and today is the
day you have ALL been waiting for your
challenge is to cook and cater TWO of the
events below. Not only will this challenge
determine the best chef in our class, but you
will get paid based on the cost per person, per
recipe from your catering jobs.

I am asking that you prepare a meal consisting of an appetizer, a main course, and a
dessert for EACH of your catering jobs. Pick 2 of the 4 parties below and lets begin
making some amazing dishes!

Master Chef Challenges:
1) To accomplish your task, you must choose
some of my, Gordon Ramseys, famous recipes
and adjust the ingredients for an appetizer, main
dish, and dessert for each of the 2 selected
events.

2) Each event must have a different appetizer,
main dish, and dessert. Therefore, a total of 6 of
my delicious recipes must be used and adjusted.

3) Calculate the amount of money you will make
based on the number of people per party and the
cost per person per recipe.

4) Include a title page for your catering event
summary with a CREATIVE Master Chef
Catering Company name.

5) Your catering event summary must include:
Each recipe LABELED with the name of
the recipe
The original number it serves and its
original ingredients
Underneath or next to the original
information should be the adjusted
amount of ingredients and the new
number of people the adjusted recipe
serves

Appetizer Recipes
Buffalo Chicken Wings serves 12 people; $5.50 per person
Ingredients
4 skinless, boneless chicken breast halves cut into finger-sized pieces
cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon cayenne pepper
teaspoon salt
cup bread crumbs
2 egg whites, beaten
1 tablespoon water
Guacamole Serves 16 people; $4.20 per person
Ingredients
3 Haas avocados, halved, seeded and peeled
1/3 lime, juiced
teaspoon kosher salt
teaspoon ground cumin
teaspoon cayenne
medium onion, diced
2 Roma tomatoes, seeded and diced
tablespoon chopped cilantro
1 clove garlic, minced









Mini-Sliders Serves 20 people; $3.50 per person
Ingredients
2 pounds ground sirloin
medium onion, peeled and cut in
1/8 tablespoons Worcestershire sauce, eyeball it
2 chipotles in adobo
2 tablespoons of adobo sauce
2 tablespoons grill seasoning, a couple of palm full
1 tablespoons extra-virgin olive oil, plus some for drizzling
3 1/3 cloves garlic, finely chopped
3 tablespoons brown sugar
2 cup vinegar
1 (15 ounce) can crush fire roasted tomatoes, about 2 cups
Salt & pepper to taste
12 slices, inch thick, brick-cut smoked Cheddar or sharp Cheddar
12 small round rolls, split
Lemon Garlic Shrimp & Grits serves 15 people; $8.00 per person
Ingredients
cup instant grits
Kosher salt and freshly ground black pepper
cup grated parmesan cheese
3 1/5 tablespoons unsalted butter
1 pounds medium shrimp, peeled and deveined, tails intact
2 large cloves garlic, minced
1 pinch of cayenne pepper
Juice of lemon, plus wedges for serving
2 2/5 tablespoons roughly chopped fresh parsley
Mozzarella Sticks serves 24 people; $6.75 per person
Ingredients
2 eggs, beaten
cup water
1 cups Italian seasoned bread crumbs
teaspoons garlic salt
1 2/3 cup all-purpose flour
3 1/3 cup cornstarch
1 quart oil for deep frying
1 (16 ounce) package mozzarella cheese sticks



















Main Dishes
Lime Glazed Pork Chops Serves 18 people; $15.95 per person
Ingredients
2 1/3 cup orange marmalade
1 jalapeno pepper, seeded and finely chopped
2 tablespoons lime juice
4 (8 ounce) bone-in pork loin chops
4 5/7 teaspoons minced fresh cilantro leaves

Chicken Enchiladas Serves 24 people; $15.00 per person
Ingredients
10 Mission Small/Fajita Flour Tortillas
2 cups diced,, cooked chicken breast meat
1 (10oz) can of reduced fat and sodium cream of chicken
1/3 cup reduced fat sour cream
1 (4oz) can of diced green Chile peppers, undrained
1 2/3 teaspoon ground chipotle pepper
teaspoon of ground cumin
teaspoon of ground coriander
3 5/6 tablespoons chopped, fresh cilantro
2 teaspoons canola oil mixed with:
o teaspoon of ground chipotle pepper
Three Cheese Bake Ziti Serves 16 people; $12.50 per person
Ingredients
1 (15 ounce) container ricotta cheese
2 eggs, beaten
3 cup grated Parmesan cheese
1 (16 ounce) package ziti pasta, cooked and drained
1 (26 ounce) jar Ragu Chunky Pasta Sauce
1 6/7 cup shredded mozzarella cheese

Spanish Chicken & Rice Serves 12 people; $20.50 per person
Ingredients
2 tablespoons all-purpose flour
1 teaspoon salt, divided
teaspoon pepper, divided
2 bone-in chicken breast halves
1 tablespoon butter or margarine
cup chopped onion
cup chopped green pepper
1 garlic clove, minced
1 (2.5 ounce) jar sliced pimentos, drained
cup uncooked rice
1 cups chicken broth
teaspoon ground turmeric
1/8 teaspoon chili powder

Steak Fingers & Gravy serves 4 people; $22.75 per person
Ingredients
1 cup all-purpose flour
3 teaspoons seasoned salt
1 teaspoon ground black pepper
1 egg
cup buttermilk
cup beef stock*
1 tablespoon hot pepper sauce (such as Franks RedHot)
2 pounds flat iron steaks
1 teaspoon seasoned salt
4 cups vegetable oil for frying




Desserts
Flan Serves 10 people; $10.85 per person
Ingredients
4 eggs
1/3 cup sugar
1/8 teaspoon salt
1 (12 fluid ounce) can evaporated milk
1 teaspoon vanilla

Popcorn Pop-Sticks Serves 24 people; $4.50 per person
Ingredients
12 cups popped, salted popcorn
2/3 tablespoons butter
1/8 cups brown sugar
cups cold water
4/9 cup cooking oil or margarine
5/6 cups raisins
Ice Cream Sundae Serves 12 people; $7.90 per person
Ingredients
1 cup semisweet chocolate chips
(12 ounce) can evaporated milk
teaspoon salt
(12 ounce) package vanilla wafers, crushed
cup butter or margarine, melted
4 cups vanilla ice cream or flavor of your choice, softened






Sugar Cookies Serves 10 people; $2.50 per person
Ingredients
1 cup white sugar
3 cup all-purpose flour
1 cup butter, softened
1/8 teaspoon vanilla extract
1 eggs
1/8 teaspoon salt
Tiramisu Serves 24 people; $7.30 per person
Ingredients
cup mascarpone cheese
cup heavy whipping cream
1 tablespoon confectioners sugar
1/8 teaspoon vanilla extract
2 teaspoons coffee-flavoring
teaspoon instant coffee granules
(10 inch) angel food cake
1 tablespoon unsweetened cocoa powder
Chocolate Cream Pudding Serves 12 people; $4.60 per person
Ingredients
1 cup white sugar
2 tablespoons cornstarch
teaspoon salt
2 cups milk
2 (1 ounce) squares unsweetened chocolate, chopped
2 eggs yolks
2 tablespoons butter
2 teaspoons vanilla extract
