Mannitol Powder
What is it?
Mannitol powder is used primarily in confectionery and
pharmaceutical applications. Its non-hygroscopic and inert
properties are ideal for providing stability and protection
to fnished products. Common uses are chewing gum,
chocolate, pharmaceutical tablets, and favor carrier.
Why should I use it?
Mannitol powder will not pick up moisture and is benef-
cial as a dusting agent on sugar-free chewing gum. It is
also used in the gum itself due to its high cooling efect
and sweetness. In sugar-free chocolate coatings, mannitol
provides a low calorie, mildly sweet alternative to sucrose.
Mannitol is slowly absorbed, resulting in a signifcantly
reduced rise in blood glucose and insulin response: it
can be a useful alternative for people with diabetes (on
doctors advice).

How do I use it?
Mannitol is a food additive under 21CFR: 180.25.
Mannitol is allowed at up to 98% in pressed mints, 40% in
soft candy, 31% in chewing gum, 15% in non-standardized
jams and jelly, 8% in confections and frostings, 5% in all
other candy and cough drops, and at less than 2.5% in all
other unstandardized foods.
Mannitol, like lactitol, has a high laxation potential.
Products potentially contributing greater than 20 grams of
mannitol per day must bear a laxation warning on the label.
