1 tablespoon canola oil
1 small onion, chopped
6 ounce boneless skinless chicken
1 (14 ounce) can fat-free, low-
sodium chicken broth
1 (14.5 ounce) can diced tomatoes
1 (15 ounce) can black beans,
rinsed and drained
1 cup baked tortilla chips
! cup shredded cheddar cheese
Heat oil in large saucepan over
medium heat. Cook onion until
soft. Add chicken, broth, tomatoes,
and beans. Bring to boil, reduce
heat and simmer 15 minutes.
Serve topped with cheese and
tortilla chips and cheese.
