Claypot eggplants Ingredients : 2 eggplants, 1 stalks spring onion, 1 chille, some coriander, 2 slices ginger, 1 clove garlic, 300g

minced pork Seasoning : cup stock, 2 tsp spicy bean sauce, 1 tsp dark soy sauce, 1 tbsp sugar Method : 1. Cut eggplants into 4 sections. Chop spring onion, chilli, coriander, ginger and garlic dinely. 2. Heat 2 cups oil in a wok, fry eggplants briefly and drain. 3. Heat 1 tablespoon oil in the claypot, stir-fry spring onion, chilli, ginger and garlic. Add minced pork and fry till fragrant. Add seasoning and mix well. Then add eggplants and cook well. Sprinkle with coriander and serve.
