Snow Fungus in Milk Ingredient : 20g snow fungus, 2 cups milk, 2 tbsp sugar, 1 egg Method : 1.

Soak snow fungus in cold water until soft. Cut out the bits, wash them thoroughly in cold water. 2. Place the snow fungus in a pot and add just enough cold water to cover the fungus. Bring to the boil. Lower the heat and simmer until tender about 3 hours. Allow to cool and drain. 3. Heat the milk, add in the snow fungus, sugar and milk. When the milk reboils, serve immediately.
