am so sorry for dropping off the radar last month. A much quicker than expected move took place! Our friend, whose home we were renting asked if he could move into it! As we started to look for another, we found one in the first week! So we packed boxes, moved 6 km north, unpacked the boxes then prestigiously cleaned 2 houses! As exhausting as that sounds the reason for no mail out is one word.....ready for it? Telstra. I had no landline, email or internet for a few weeks and spent many hours on my mobile trying to have this problem fixed...and we have all been there; on the phone with an overseas tech getting nowhere fast! Alas I am fully functional again! I hope you all had a great Easter break, in know my lot did. We cooked our little hearts out and even brother Scotts BBQ was on fire, alas with a pork belly in its tummy! You can imagine how entertaining that was for me to see two grown men turn into rural firefighters! You know it is funny when, as you are witnessing it all unfold, you comment that you are in the midst of a memory being created! Yep those 2 men in oven mitts frantically gained control of the situation! To start the weekend feast we enjoyed BBQ Duck with an Orange Sauce Reduction served with Brown Rice and Fennel salad, alongside crispy potatoes. I like to steam my potatoes first then pop them in a super hot oven with some garlic, herb and a light spray of oil to crisp up for 15 minutes. Then on Easter Sunday we had the pork belly served with Granny Smith Apple puree on a bed a slaw for entree. Roasted Lamb with italian whipped potatoes (pg. 83 EDCB) roasted vegetables and fresh steamed beans was our main fare. Brother Scott did a great job on the roast Lamb and a wonderful job on the gravy. I watched as he did this on the stove and knew the Thermomix would do a great job on making his gravy for him. A decadent choc-cheesecake was the grand finale made by Melita. Thank goodness we only had the two nights otherwise who knows what we would have been lashing out on next! I managed to squeeze in two demonstrations this month. Mrs Councilor (whose husband ran for local council) held her demo in the cafe they owned. I must say I had a great time with the high pressure hot hose to rinse out my TM bowl in two seconds flat! Took me back to my days at McDonalds! After a phone call to the chef we worked out how to crank up the commercial oven for my scrummy bread rolls. I walked out the door, and the heavens opened up and we experienced a torrential downpour. All of Mrs Councilors guests arrived which I think deserves recognition! Bravo! Then I headed off to Mrs Camper Trailer. This demo had more men than women which was a first, so perhaps it should be Mr and Mrs Camper Trailers! They had just returned home from camping over Easter and purchased the camper trailer they where camped next to! I can see another camp kitchen out there with a Thermomix on its bench! ANTONIAS M a y
N e w s l e t t e r I 2 With mothers day landing this month, I thought some inspiration on some breakfast or brunch ideas could be helpful to leave lying around. Hint hint husbands and kids! If a filling Bircher Muesli is your thing then try soaking oats in apple juice overnight. Make a serve of CADA (coconut, apple, dates and almonds in equal measure and blitz 5 seconds speed 5). Now if you have not made your own yoghurt before... Seriously try it, recipe pg. 19 EDCB. Also for your coulis of berries the recipe is pg. 158 EDCB. A layered dollop of all 3 components on top of your soaked oats is heaven! Man of the house can not get past a cooked breakfast equalling I love you loads! So if that's the lane you want to travel in here is a few suggestions. To make a beautiful focaccia follow recipe pg. 113 EDCB. Then halve tomatoes (choose nice big ones) 1 per adult and a half per young child, scoop out the seeds leaving a great red, edible cup. Line the inside of tomato halves with baby spinach, push gently to keep in place. Place in your Varoma receptacle (you may have to slightly cut base of tomato to keep it stable). Crack an egg into each, place a small cube of feta cheese and a little slop of cream and season. Steam this with 500 gms water in TM bowl on Varoma temp, speed 3 for 13 minutes (this is using cold tomatoes and eggs with room temp water). If your man of the house insists, add a side of crispy bacon or smoked salmon it works a treat. My man of the house was a little disappointed that I will be doing the mothers day fun run in the morning as part of my training instead of lounging around like a princess! So a big hearty brunch is on my wish list this year! If you are a big kid at heart why not indulge in an idea I am borrowing from my fav breaky spot ( Raw at Sanctuary Cove). Nutella pancakes. For the pancakes, I am using the piklet recipe pg. 38 EDCB. Smother with hazelnut spread (pg. 148 EDCB). In little dishes on the side Raw serve whipped cream and a berry coulis, but I think I would do a little ice cream and banana for my lot! All of these options come standard with a strong cup of tea and glass of ruby red grapefruit juice (use lemonade recipe pg. 26 EDCB and replace lemons with red grapefruit and definitely use sparkling water). Ohhhh I can hardly wait for Sunday 13th.......post 8km run! Miss A3 asked a question I am sure all kids throw around their little minds.....we have fathers day and mothers day, why is there no kids day! I haven't been able to answer that as I am still bent over laughing after folding her 1001 clothes that I have just laundered on her behalf!! My mother (Mamma Goose) is currently galavanting around on the most spectacular overseas trip! Normally I have grey/blue eyes but I am sensing some green sneaking in there! So no posting from Pappa Goose either this month ( yes he is galavanting with her!). My Beautiful mother in law declined to make a trip up for the weekend so I believe I will be the only mother in my family requiring attention! I am sensing high expectations lurking around! However I must say I am easy to please; give me cups of tea without asking, a good chick flick, a little foot massage and don' t ask me to do anything chore related for one day! Then finish me up with a hot bubble bath ( using the Aesop Geranium bath gel in the cupboard on my side in the bathroom, hint hint), let me watch Keith Urban.... oops, sorry, The Voice, then roll me into bed! 2 0 1 2 a recipe for something we dont eat......... makes 500g 400 g spring or Puried water 1 tbsp vegetable glycerin (optional) 30 g emulsifying wax 25 g fresh coconut esh 20 g avocado oil 20 g shea butter 10 drops vitamin E (optional) 3 tsp essential oil of your choice Place water, glycerin and wax into TM bowl and mix 30 secs, speed 2. Pour out 1/3 of liquid and reserve. heat the remaining liquid for 2 mins, 60C, speed 2. pour into Thermoserver and keep warm. Place coconut, avocado oil and shea butter into TM bowl and heat for 2 minutes at 60c, speed 2. Mix ingredients on speed 7 whilst slowly pouring warm liquid from the Thermoserver through the top of the TM lid with MC in place. Blend for 1 minute on speed 7. During the last few seconds, pour in the reserved 1/3 of liquid and blend for a further 30 seconds, speed 7. Add essential oils and incorporate for a few seconds speed 5. The cream is liquid so pour into jars now as it is easier to handle. As it cools it will solidify. Some Reading I Loaded On My ipad... I love a good column in the paper, and admit that I ensure each week I read Mia Freeman. In the last month she mentioned a book that had come on my radar a few times previously called Why French Children Dont Throw Food. I downloaded and enjoyed the read as a mother! Even started a vegetable course in my home of a small salad before serving dinner. I was amazed at how the children ate the salad without complaints! That book got a one thumb up from me. More recently Mia mentioned a trilogy series Shades of Grey. This is unlike anything I have read before and must say found it an easy read.....warning..... it is a racy trilogy but believe me you want them to hurry up and get on with it after the rst book!
