Ronnies Tiramis Ingredients: 400/500 gr ladyfingers Savoiardi Vincenzi, a must!

400/500 gr mascarpone cheese Usually I apply the latter amount =)) 4 eggs 100 gr sugar brewed espresso Also Finnish coffee is really ok, and faster to prepare some wine or alcoholic beverage Amaretto, Port Wine, Marsala Wine, Samos Wine, Cava, Koskenkorva, Whisky, Rum .depending on your taste. Koskenkorva and Cava/Champagne are a pretty good mix, if you dont want the cream to be too sweet. cocoa powder , for dusting Directions 1. Separate eggs, placing yolks in a large-sized bowl and whites in a medium-sized bowl. 2. Beat egg whites until stiff peaks form; set aside. 3. Beat egg yolks and sugar together until creamy and golden yellow. 4. Add mascarpone and whip until fully incorporated. 5. Fold in beaten egg whites, add the wine (or any alcoholic beverage you have choosen), and set mixture aside. You can also add some coffee if you like. 7. Pour coffee (preferably quite cold) into another dish to dunk the cookies. 8. QUICKLY dunk enough cookies (one at a time) to line the bottom of the serving dish. 9. The cookies absorb liquids very rapidly so you don't want to keep them in the hot coffee - just dip them in and take out immediately. 10. Once the bottom of the serving dish is covered, spread the cream mixture over the cookies. 11. Repeat the cookie step, then spread on the remaining mascarpone mixture, till you finished the ingredients 12. Dust with cocoa. 13. Refrigerate for several hours (at least 2, even better 7/8) to allow everything to set and to let the flavours develop. 14. Ideally, the tiramisu should be made the day before you wish to serve it, and it lasts several days if kept refrigerated. You can also add more cocoa the day after (to make it look more beautiful for your guests). I believe it is important to place the first layer of cocaa before putting it into the refrigerator, the taste is absorbed by the first layer of cream and it gives a really good taste.

15. Eat it alone or with friends. Be careful, alone is HIGHLY dangerous (Im addicted to it, so I prepare it rarely). A good Port Wine, or an important red wine (Sirah, Barolo, Barbaresco, Dolcetto) is recommended =))
