Method for filling: ‘Heat oil, saute garic & shallots til fragrant. Add dried shrimps, saute unti light brown & fragrant before adding chinese mushroom, yam bean and carrot. (pic 1-2) 2.Stir ty for 2 minutes until vegetables are cooked.Season to taste with pepper, salt & sugar. Method for dough: 41.Place wheat starch, tapioca four & sait ina food processor. ‘Tum on the power & add in cooking il 2.Wile the processor in stil running, add in hot water unt a ball of dough is formed, slowly add in lukewarm water & turn off machine. 3.Lightly grease hands with oiwhle the dough is stil warm, rollout the dough thinly & cut into 11 em circles with a pas— try cutter. (pic3 4) 4.Piace a tablespoon of filing ingredient into the center of teach dough round (Pic 5) '5.Fold dough skin into half, press lightly to seal & then pleat, edges (pic 6) 6.Place wrapped“ chai kueh” onto a greased tray & steam over rapidly boiling water for 7 min: tes/ until cooked, 7-Remove from steamer & top with garlic crisps & gartc ol .Serve with chilly sauce. 83
