    Part one - Soups

    Watercress soup

    Ingredients:

    * 100 grams of watercress.

    * 3 g onions.

    * 2 grams garlic.

    * 5 grams of olive oil.

    * 2 grams salt.

    * 1 gram white pepper (powder).

    * 3 grams of lemon juice.

    * 2 grams of cream.

    How to prepare :

    * Wash the watercress leaves in cold water, then chop small pieces, as well as chop onions and garlic.

    Ingredients:

    * Half a kilogram tomato.

    * 4 cucumbers, peeled.

    * 1 green bell pepper.

    * 1 small onion, mashed.

    * 1 clove of crushed garlic.

    * Half a teaspoon of salt.

    * Half a teaspoon of mixed spices.

    * 3 hot sauce drops.

    How to prepare :

    * One tomato is finely chopped, as well as one cucumber and one green bell pepper.

    * Chop the rest of the tomatoes, cucumbers, bell peppers and onions and mash the mixture in an electric mixer with garlic, salt, pepper and hot sauce until smooth.

    * Place the mixture in an airtight saucepan, and keep it in the fridge until serving time.

    * Serve the soup on special plates and garnish with chopped vegetables on top.

    Pomegranate soup

    Ingredients:

    * 1 cup of peeled chickpeas.

    * Half a cup of white rice.

    * 1 bunch of chopped parsley or a cup

    from dry ground parsley.

    * 1 six-ounce can of frozen and

    chopped spinach, and 225 grams

    of fresh, chopped spinach.

    * 1 tablespoon of dry and ground mint.

    * 1 teaspoon salt.

    * 2 teaspoons of olive oil.

    * 1 teaspoon ground black pepper.

    * 2 teaspoons of sugar.

    * 1 teaspoon of turmeric powder.

    * ¼ A quarter of a kilogram of minced beef.*

    * 3 cups of water.

    * 1 bottle of pomegranate juice or three quarters of a cup of pomegranate

    molasses.

    How to prepare :

    * Peeled chickpeas are placed in a pot of water and left to boil over a high temperature.

    * Add three cups of pomegranate juice to the saucepan or half a cup of pomegranate molasses.

    * Leave the chickpeas to boil for ten minutes, then add the rice to it and leave it on the stove for twenty minutes or until the rice begins to crust

    * Season the ground beef with salt, pepper and turmeric, then make it into balls, add to the saucepan with parsley, spinach, salt, pepper, sugar and the remainder of pomegranate juice or pomegranate molasses, and let the mixture boil for 30 minutes or until it becomes sticky.

    * Heat the oil in a separate frying pan, and add turmeric to it to fry.

    * Put the pan on the fire and add mint to it and mix with turmeric.

    * Add the mint mixture to the hot soup and let it boil on low heat for two minutes, then serve.

    Onion soup

    Ingredients:

    * 1,200 grams of onions.

    * 60 grams of butter.

    * 20 grams of vegetable oil.

    * 20 grams of chicken broth.

    * 200 grams of veal broth.

    * 2 grams of rosemary.

    * 2 grams of thyme.
