Lemon Meringue Pie
SERVES 10–12
INGREDIENTS
200g plain biscuits
100g ginger snap biscuits
½ tsp ground or freshly grated nutmeg
150g butter, melted
Whipped cream, to serve
LEMON FILLING
2 x 395g cans sweetened condensed milk
3 egg yolks
Finely grated zest and juice of 1 lemon (you should get about 3 tbsp of juice)
MERINGUE
3 egg whites
165g (¾ cup) caster sugar
METHOD
1 Grease a 20cm round cake pan or pie dish.
