Chai Hot Chocolate
Hot chocolate made with fragrant Indian spices will warm you up even on the coldest of days.
Servings: 2
Total Time: 14mins
Ingredients:
3 cups full-fat coconut milk
½" fresh ginger chunk (peeled, finely grated)
1 cinnamon stick
1½ tsp fennel seeds
½ tsp whole cloves
5 cardamom pods (gently smashed)
2 black peppercorns
½ star anise
1 astragalus root strip
2 tbsp cocoa powder
Sweetener of choice
2 tbsp maple syrup
2 tsp vanilla extract
Pinch sea salt
2 tbsp gelatin
Directions:
1. Add the coconut milk to a pan followed by the grated ginger, cinnamon, fennel seeds, cloves, cardamom pods, black peppercorns, star anise, and astragalus root.
2. Cover the pan with a lid, and over very low heat, heat for 10 minutes until the milk is steaming hot and the spices, fragrant.
3. Remove the pan from the heat and using a fine mesh strainer, strain into a food blender.
4. Add the cocoa powder, along with your chosen sweetener (to taste), maple syrup, vanilla essence, sea salt, and gelatin and blend for 30 seconds until the liquid is fully incorporated and has a frothy surface foam.
5. Pour into your favorite mugs and enjoy.
