Martha is a chef and a cookbook author. She has had a love of all things culinary since she was old enough to help in the kitchen, and hasn’t wanted to leave the kitchen since. She was born and raised in Illinois, and grew up on a farm, where she acquired her love for fresh, delicious foods. She learned many of her culinary abilities from her mother; most importantly, the need to cook with fresh, homegrown ingredients if at all possible, and how to create an amazing recipe that everyone wants. Now that she is a mother, it is more important than ever to make sure that healthy food is available to the next generation. Burritos are considered to be the ultimate meal: meat, veggies, carbs wrapped in an easy to carry wrap that you can take along with your wherever you go. However, what many people don’t understand is how to utilize the ingredients they currently have to make an authentic Latin meal that is packed with delicious Latin flavor.

That is exactly what you will learn how to do in this book. By the end of this cookbook, I hope you learn not only how to prepare authentic burritos completely from scratch, but that you are able to use everything you have learned in this book to make whatever kind of burrito your heart desires. Chicken, Bacon and Ranch Burritos

To kick things off, we have a delicious burrito dish that is not only filling, but absolutely mouthwatering as well. Packed with hearty chicken and bacon, this burrito will please all who try it.

Makes: 4 servings

Total Prep Time: 35 minutes


½ pound of bacon

1 Tbsp. of extra virgin olive oil

1 pound of chicken breasts, boneless and skinless

1 tsp. of powdered garlic

1 tsp. of dried oregano

½ tsp. of powdered chili

¼ tsp. of smoked paprika

Dash of salt and black pepper

4 tortillas

3 cups of Monterey jack cheese, shredded

3 green onions, thinly sliced

1 avocado, chopped

Ranch dressing, for drizzling


1. In a skillet set over medium heat, add in the bacon. Cook for 5 to 10 minutes or until crispy. Drain the bacon grease. Crumble the bacon and set aside.

2. In a skillet set over medium to high heat, add in the extra virgin olive oil.

3. Season the chicken breasts with a dash of salt, black pepper, powdered garlic, dried oregano, powdered chili and smoked paprika. Transfer into the skillet. Cook for 8 to 10 minutes or until gold on both sides. Remove and set aside to rest for 10 minutes. Slice into thin strips and set aside.

4. Top the tortillas off with the chicken, crumbled bacon, shredded Monterey jack cheese, sliced green onions and chopped avocado. Drizzle the ranch dressing over the top.

5. Roll the burrito tightly. Add into a skillet set over medium to high heat. Cook for 3 minutes or until crispy. Remove and serve immediately.
