Bacon, Mushroom and Ricotta Stuffed Zucchini Flowers
Enjoy these stuffed zucchini flowers as a light lunch or appetizer. They are truly delicious.
Servings: 4
Total Time: 1hour
Ingredients:
Oil
4 slices bacon
4 ounces mushrooms (finely diced)
2 tsp rosemary (minced)
½ cup ricotta
1 medium egg yolk
12 zucchini blossoms (stamens removed)
Sea salt
Extra-virgin olive oil
Directions:
1. Preheat the main oven to 400 degrees F. Lightly oil a 9" square baking dish.
2. In a pan, cook the bacon. Remove the bacon from the pan and cut into small pieces. Set to one side on kitchen paper. Retain 2 tbsp of bacon drippings in the pan.
3. Add the mushrooms to the pan along with the rosemary and cook for 3-5 minutes, until browned.
4. Drain and set aside to cool for several minutes.
5. In a bowl, combine the ricotta with the cooked bacon pieces, drained mushrooms, and egg yolk. Season with sea salt.
6. Carefully open the zucchini blossoms and gently stuff
