Introduction
Just where the word pizza came from is not known for sure. It may very well be the Italian word for pie but it could have even come from the Greek word pita.
Although pizza is synonymous with all things Italian, the history of this humble pie goes back way further to the Middle East. In ancient times the Greeks, Armenians, Israelis, Egyptians and Babylonians all made some sort of pizza derivative.
Flatbread (focaccia) was being cooked in mud ovens with the Greeks and Romans topping the homemade focaccia with olive oil, herbs and spices.
In the early 16th century tomatoes, initially believed to be poisonous, were brought back to Europe.
They soon found their way to Italy where the poor people of Naples created the very first homemade pizza by placing tomatoes on their yeast dough along with olive oil, cheese and herbs.
All of Italy decreed these Neapolitan pies to be the very best.
Antica Pizzeria, the first pizza shop opened its doors in 1738 in Naples’ Port Alba. Its ovens were lined with volcanic rocks taken for Mount Vesuvius. Amazingly the pizzeria it is still there today.
Its popularity increased in the latter part of 1800. While on an Italian royal visit with her husband, Queen Margherita of Italy enjoyed this peasant bread made with mozzarella, basil and tomatoes so much, that the recipe became known as Pizza Margherita.
The rest, as they say, is history. The humble pizza pie is now enjoyed on menus all over the world.
Basic Pizza Dough*
This recipe makes enough dough for one base which will serve 2 people.
Portions: 2
Prep Time: 10mins
Total Time: 1hour 10mins
Ingredients:
¾ cup water (warm)
¼ ounce active dry yeast
1 tbsp. granulated sugar
½ cup olive oil (plus extra)
1 tsp sea salt
2 cups all-purpose flour (plus extra)
Directions:
1. Into a bowl, add the warm water and yeast. Give one quick stir and then allow to stand for 5 minutes until foamy.
2. Add the sugar, oil and salt into the yeast and water mixture, stir and then mix in the flour until you start to form a sticky dough. Transfer the dough to an oiled bowl. Brush the top of the dough with a little extra olive oil and then cover with plastic wrap. Leave the bowl in a warm place (free from any draft) until it doubles in size (approximately an hour).
3. When ready to use, turn the dough out onto a floured work surface and knead only a couple of times.
*The dough can be refrigerated for up to 2 hours. Alternatively, it can be frozen in a resealable bag for up to 2-3 months.
