2 tbsps. olive oil

1 small onion, chopped

1 jalapeño pepper, seeded and diced

1 tsp garlic, minced

1 tsp. turmeric

1 tbsp. ground cumin

1 tsp. dried oregano

Pinch of crushed red pepper flakes (optional)

3 cups chicken stock

1 can small white beans

2 chicken breasts

1/2 cup coconut milk

2 tbsps. chopped parsley



1. Heat olive oil in a large pot over medium heat.

2. Add the onion, and jalapeño, cook for about 3-5 minutes, until the onion is translucent and soft.

3. Add the garlic and spices to the pan, and cook, stirring, for an additional minute.

4. Add the stock, white beans, and chicken to the pot.

5. Simmer for about minutes, until the chicken is tendered.

6. Stir in the milk and heat for another 2-3 minutes.

7. Sprinkle chopped parsley on top.

8. Enjoy!
