    Chapter 1.  Introduction

    Cancer is a group of diseases characterized by the development of abnormal cells that multiply uncontrollably. These cancer cells then infiltrate normal body tissues and vital organs and impact their normal function, ultimately resulting in death. Cancer has the ability to spread throughout the body over a short period of time (often months or a couple of years). Cancer is caused by both external factors (e.g. chemicals, radiation, smoking, infections,) and internal factors (eg. genetics, immune conditions, and hormones).

    Cancer is the second leading cause of death in the United States. While there is no cure for many types of cancers, there has been significant progress in research and experimental treatments. More importantly, there have been more cancer awareness programs and a higher emphasis on prevention. It is estimated that more than half of all new cancers and cancer deaths are preventable by controlling the external or internal factors.

    While you don’t have control over some of the factors such as genetics or environment (or country) you live in, the lifestyle and eating habits can profoundly impact the risk of cancer. It is known that the three keys to wellness are 1) improving the body’s immunity to diseases 2) reducing oxidative damage to cells 3) controlling inflammation. These are keys to preventing cancers as well. This book focuses on foods and recipes that help to achieve this and provide anti-cancer benefits.

    Curry is usually an Indian dish made of meat, fish, or vegetables cooked with spices and herbs. The end product is that the cooked meat, fish or vegetable are fully soaked in a savory spicy sauce. Curry is usually eaten with rice or bread. The dish is very colorful – most often red or yellow and in some cases, green.

    Curry powder or Indian curry powder is a mix of several spices, in some cases up to 20 different spices and herbs. The most notable spices used are coriander, cumin, turmeric, and chili powder. Other ingredients
