Beef, Bean and Cheese Burritos
To kick things off we have a delicious burrito recipe that is packed full of a fresh flavor I know you are going to love. Best of all these burritos don’t take too long to make and are packed with plenty of flavor.
Makes: 4 Servings
Total Prep Time: 20 Minutes
Ingredients:
6 flour tortillas, burrito size
1 ½ cups of cheddar cheese, shredded
Ingredients for the burrito filling:
1 pound of beef, lean and ground
1 onion, chopped
4 to 6 cloves of garlic, minced
1 ½ tsp. of chili, powdered
1 tsp. of cumin, ground
½ tsp. of paprika, smoked
½ tsp. of salt
¼ tsp. of pepper
¼ tsp. of oregano, dried
1, 16-ounce can of refried beans
¼ cup of sour cream
½ cup of salsa, medium
Dash of hot sauce
Ingredients for the topping:
Sour cream
Lettuce, fresh and shredded
Tomatoes, fresh and thinly sliced
Guacamole
Rice, fully cooked
Directions:
Place a large skillet over medium heat. Add in the beef and sliced onions. Stir to mix and cook for 10 minutes or until the beef is cooked through and the onions are soft.
Add in the garlic and cook for an additional minute. After this time drain the fat from the skillet.
Add in the powdered chili, ground cumin, smoked paprika, dashes of salt and black pepper and dried oregano. Stir well to mix.
Add in the refried beans and stir well to incorporate. Add in the sour cream and medium salsa. Stir well and continue to cook for 2 to 3 minutes or until completely heated through.
