Did you know though, that the Christmas cake originates from a cake made, and eaten on 5th January or Twelfth Night? The night, the three wise men took gifts to the baby Jesus.
The cake’s spices symbolizing the gifts given to the Jesus, with almonds and dried fruit a rare winter treat.
However, in the mid 17th Century Olive Cromwell banned feasting on Twelfth Night, and so people switched their time of feasting to a day when it was permitted, Christmas Day.
In Victorian times the recipe evolved with marzipan replacing almonds, and icing making an appearance.

A flaming Christmas pudding is the ultimate end to a Christmas meal but did you know that the pudding evolved from the 16th century plum porridge, made from beef shin, sugar, fruit, and spices? This strange-sounding dish traditionally eaten on Christmas Eve.
Christmas pudding as we know and love it today didn't appear until the mid-1800s; its ingredients being suet, flour, sugar, spices, and fruit.

Best Ever Christmas Cake
For many, baking their own traditional Christmas cake is a daunting and incredibly lengthy process. However, even the most novice cook can tackle this recipe with delicious results. So, what are you waiting for cake lovers!?

Prep Time: 15mins
Cooking Time: 2hours 30mins
Total Time: 5hours 45mins
Ingredients:
Butter (for greasing)
2 pounds 4 ounces dried mixed fruit
3½ ounces dried pitted prunes (chopped)
2 ounces dried figs (chopped)
3½ ounces dried cranberries
2 balls stem ginger (grated, syrup reserved)
Juice and zest of 1 medium orange
2 dashes Angostura bitters
6 ounces brandy
6 ounces dark brown sugar
6 ounces chilled salted butter (cubed)
7 ounces self-raising flour
4 eggs (lightly beaten)
½ tsp each ground cloves, cinnamon and fresh nutmeg
Directions:
1. Preheat the main oven to 325 degrees F.
2. Gather and measure out all of your ingredients.
3. Grease an 8" deep cake pan and line with greaseproof paper.
4. Add all of the fruit to a deep saucepan along with the stem ginger and a tablespoon of the reserved syrup.
5. Add the fresh orange juice and zest, Angostura bitters and brandy. Heat until boiling and then turn down to a simmer, cook for 5-7 minutes.
6. Add the brown sugar and butter; stir well until the sugar has dissolved.
7. Take off the heat and set aside to cool a little.
8. Sift in the flour and stir well before adding the beaten egg and spices. Give a final stir, ensuring all ingredients are combined.
9. Pour the mixture into the cake pan, leveling the surface with the back of a spoon.
10. Cover the sides of the cake pan with brown paper and tie with kitchen string.
11. Place in the oven and bake for approximately 2¼ hours.
12. Allow the cake to cool in the pan for 3 hours before using the greaseproof paper to help remove it.
13. Do not discard the greaseproof paper; wrap the cake using plastic kitchen wrap and then aluminum foil. Place in an airtight re-sealable container to store.
