Rice Water Porridge

Earlier generations in Ghana started their rice water with lots of sugar, and evaporated milk that gave the dish its rich, creamy flavor. The rice is usually mashed against the sides of your pot, to break the grains down and make them easier to eat.

Makes 2 Servings

Cooking + Prep Time: 45 minutes


8 to 10 cups water, filtered

1 cup rice

Optional: 1 pinch nutmeg

Evaporated milk, as desired

Sugar, as desired

Salt, as desired


1. Boil water over med-high heat in medium pan.

2. Add in washed rice to pan.

3. Allow rice to boil for 15 to 20 minutes.

4. When the rice becomes tender, reduce heat and simmer.

5. Press the rice against sides of pot. This will mash the rice a bit.

6. Add sugar and milk, as desired.

7. Serve promptly or
