While nuts are not low in calories, they are a great source of the ‘good fats’ that we hear so much about. While most of us are ‘watching our weight,’ we do need fats in our diet. Nuts have to be my favorite source of fat. We’ve taken 10 of the world’s most popular nuts; almonds, Brazil nuts, cashews, chestnuts, hazelnuts, macadamias, peanuts, pecans, pistachios, and walnuts, and come up with just 3 amazing dishes for each. These dishes are only that start of an incredible nutty journey that you can go on once the world of nuts has been opened up to you!
As an almond fan, you may be interested in Almond Breakfast Sweet Potatoes. If Brazil nuts are your favorite, you’ll be dancing the samba with our Spicy Brazil Nut Chocolate Tart. Introduction
Nuts are just so versatile, and really should be forming part of a healthy and balanced diet, as a great source of good fats, fiber, and protein. If you have dietary requirements such as being gluten-free, dairy-free, or even vegan, then nuts can really help you! Nut flours or even just processed nuts can be used in baking. Nut milks make a delicious milk alternative. As a vegan who is looking for more than just carrot sticks for dinner, nuts will be of major interest to you.
Just in case you’re not yet convinced, let me tease you by naming a few of the incredible recipes we have inside this book. You’ll be wanting to try Avocado & Pistachio toast, I’m sure, or Peanut Butter Berry Crumble. You can try your hand at Vanilla Cashew Fudge or test your pastry skills with Walnut Pain au Raisins. If it’s a main meal you’re looking for Pistachio Pesto Pasta may be up your street, or maybe Chinese Cashew Chicken, or Brazil Nut & Mushroom Burgers.
I promise you won’t be disappointed when you begin to incorporate more nuts into your diet with the help of these 30 nut recipes. I know that you’ll soon be coming up with a ton of your own, too. Come on, let’s go nuts!
Nut Butter
Nut butters are hands down the best topping for toast. My personal preference happens to be the mainstream peanut butter, but I happen to be just about the biggest peanut fanatic on the planet. I am a lover of all nut butters though, and I love that making your own at home means that’s it’s all goodness in there too.
Makes: 1 ½ cups
Preparation time: 20 minutes
Ingredients:
3 cups nuts of your choice
Add-ins of your choice (optional!), such as chocolate chips, sunflower seeds, vanilla extract, etc.
Oil of your choice for loosening
Serving suggestion:
Like I said; the best topping for toast. I love using a wholemeal, seeded bread to just add further to the earthy, nutty flavors you get going on.
1) Preheat the oven to 350 °F.
2) Spread the nuts out on a baking tray and roast them. Most small nuts will only need 8-10 minutes or until lightly browned, but chestnuts will take at least 30 minutes.
3) For hazelnuts, pistachios, or any other nuts you’ve roasted with the skin still on, shake the nuts in a towel to rub against one another and remove the skins. If you’re using chestnuts, be sure to peel off the skins.
4) Then, simply transfer the nuts to a food processor and blend, blend, blend until a smooth(ish) and creamy butter has formed. You may need to scrape the sides from time to time. Blending time will vary depending on what nuts you’re using, and whether you are happy to have any chunks in there. If your nuts seem to be struggling to smooth down on their own, you can add a little oil of your choice. Flavourless vegetable oil will work, but you could also use the oil of that particular nut for even more intense flavor.
5) Once the butter is at your desired consistency, you can blend in your chosen add-ins.
Tips: Here are some add-in suggestions for each of our 10 main nuts featured in this book.
Almond & Cinnamon (Start with just ½ a teaspoon of cinnamon, and add more to taste.)
Brazil Nut & Ginger (Fresh ginger is divine with Brazil nuts, but be aware that it is not at all faint-hearted! Use sparingly!)
Cashew & Orange (Add in just a couple of drops of orange extract, and maybe stir in some candied peel, too.)
Chestnut & Cranberry (This is one for the winter! Just stir dried cranberries through the butter once blended.)
Hazelnut & Dark Chocolate (= Nutella!)
Macadamia & Honey (Either add the honey in or roast the macadamias in honey.)
Peanut & Caramel (If you’re clever and patient enough, you can make your own caramel. Personally, I don’t have much time for that, so you can either blend in caramel chips or just swirl caramel sauce into the jar, alternating with the peanut butter.)
Pecan & Pumpkin Spice (Could not get more ‘Fall’ if it tried!)
