I want to thank you for purchasing this book, Beginner’s Guide to Cooking with Spices.
I have written books on several essential spices, as well as their medicinal and health benefits. Many of these books include recipes. I realized that a lot of people are still new to spices and a book on how to use them will be beneficial to many. This book contains a lot of information that you will find handy in your daily cooking adventures with spices.
Some of the spices used in modern times have been known to ancient civilizations and their health benefits are proven over thousands of years of use. Modern medicine has been increasingly studying many of these herbs and spices. However, many more organized studies are needed to get approval from the regulatory agencies for these herbs and spices to be accepted as part of mainstream prevention or treatment options for a number of medical conditions.
One thing is for sure - no one likes food that tastes bland. We all want to eat healthy and tasty food. But we are too busy to make fresh food at home. So, we settle for fast foods or packaged foods instead of healthy, homemade meals. The recipes listed in this book are quick and easy. The average time to cook is about 20 minutes.
This book is part of the Essential Spices and Herbs
series. The book details use and benefits of many common and essential spices including turmeric, cinnamon, chili, cumin, coriander, and ginger, among others. Many of these spices have proven health benefits including fighting cancer, Alzheimer’s, diabetes, pain, and much more.
The recipes are put together so that they can be easily prepared using common ingredients. There are several optional ingredients that you can try out to make the dish according to your personal taste and creativity.
History of Spices
Humans have used spices from the beginning of time. One can find references to various spices in ancient scripts such as the Old Testament, Bhagavad-Gita, and other writings. Ancient Egyptians, Chinese, Indians, Arabs, Greeks, and Romans have all used spices for various purposes, from cooking to food preservation and as medicine. There were many things that attracted humans to the use of spices – their aroma, their distinct taste and ability to flavor food, their color, and finally, their medicinal properties. Archaeologists discovered the use of spices as preservatives or offerings in ancient Egyptian tombs and in other excavations. There are records of many civilizations around the world using herbs and spices for common ailments such as wound healing, fever, microbial infections, and more.
Some fascinating history of these common spices is described below. Many of the other spices have a similar history and are too long to write about in this book.
Similar to turmeric and garlic, ginger use also dates back from 4000 to 5000 years by Indians and Chinese. Indians used ginger as a standalone flavoring ingredient in drinks such as buttermilk and ginger teas. Ginger was used in Ayurvedic medicine as a substance that helped with stomach ailments and nausea. Ginger was often used in conjunction with garlic and turmeric (in paste form) to flavor curries in Indian cuisine. Cardamom, cloves, and cinnamon similarly were used by ancient civilizations as well.
In summary, many of the spices described in this book have been used for over 4000 years by ancient Indians, Chinese, and Egyptians; either in conjunction or individually and have a rich history. There is some evidence that the Indus Valley civilization which was at its peak about 2500 BC used all kinds of spices – turmeric, cinnamon, coriander, garlic and ginger, and others. Some of these spices such as turmeric and cinnamon are also used as an important part of Ayurvedic medicine for diabetes treatment, wound healing,
