Low Carb Cauliflower Pot Pies
This comforting chicken pot pie is a low carb recipe that has nice the flavors! These pot pies are so delicious and are ideal for you. The combination of the cauliflower and chicken will definitely leave you wanting more. They have low calories and are high in flavors and above all, they are gluten free! Isn’t that awesome? Cooking Time: 25 Minutes
Ingredients:
Cauliflower base:
1 medium cauliflower head
1 teaspoon salt
1 egg
¼ cup parmesan cheese, shredded
1 teaspoon pepper
For the pot pie filling:
½ onion diced
1 ½ cups chicken broth
¼ cup unsweetened almond milk
1 cup mixed vegetables, frozen
8 oz diced cooked chicken
1 tablespoon onion powder
½ tablespoons salt
½ teaspoon black pepper
¼ cup water + 2 tablespoons cornstarch
Instructions:
Preheat the oven to 400 degrees. Process the cauliflower in a food processor until it the size of rice. Put it in a bowl and microwave it for 5 minutes. Put it aside to cool for about 8-10 minutes
Squeeze cauliflower leaves to get its juice using a cheesecloth. Get as much juice as you can so as not to make the bases soggy. Get as much juice as possible. After using the cheesecloth, repeat again and this time use a dry cheesecloth to squeeze more.
Thoroughly combine the dry cauliflower rice, parmesan cheese, egg, pepper and salt in a bowl. Spray 4 ramekins or a big muffin pan and press the mixture carefully on the sides, making a bowl. Bake until its edges are brown and the middles dry up or for 21-25 minutes.
As the cauliflower bases are getting ready, spray a cooking spray on medium saucepan and sauté on medium heat the diced onion until it becomes tender. Add onion powder, mixed vegetables, almond milk, chicken broth, black pepper and salt while stirring. Cover and cook for 5-8 minutes.
Mix the water with cornstarch to form a slurry and pour it to the chicken. Stir and cook on high heat until it boils and then remove from heat.
Buffalo Chicken Stuffed Spaghetti Squash
This recipe is so sweet that you might want to hide the left overs so that you can eat the following day! It is simply delicious! It brings in the best things concerning buffalo; the crunchy and crispy vegetables, a sauce that is spicy and tangy and ranch dressing that is so creamy cool.
