EASY TEMPTING DELICIOUS

Prawn and broccoli rice bowl

A healthy, filling meal with a zingy sesame dressing. Leftovers are great for your lunch box. Serves 4 m Ready in 30 minutes

a little oil, for frying
300g raw king prawns
400g tenderstem broccoli, trimmed
200g fne green beans, trimmed
250g pouch microwave brown basmati rice
1tbsp sesame seeds, toasted
1 red chilli, sliced

for the dressing:

2tbsp sesame oil
2tbsp soy sauce
2tbsp rice vinegar
1tbsp honey

1 Heat the oil and cook the prawns until pink and cooked through. Steam the broccoli and beans until tender, and cook the rice in the microwave according to packet instructions.

2 Mix together all of the ingredients for the dressing. Toss the broccoli, beans and rice in the dressing and the sesame seeds, top with the prawns, and then scatter over the chopped chilli.

Per serving: 1 435 kilojoules, 16,5g fat (3g saturated), 24g carbohydrate
