Mediterranean Diet Breakfast
Creamy Mediterranean Panini
Cooking time: 24 minutes
Serving size: 4 servings
Description: This recipe is rich in vitamin C which is very good for your immune system.
Ingredients:
Divided mayonnaise dressing with Olive Oil (1/2 cup)
1 jar roasted red peppers (7 oz.) (drained and sliced)
Chopped fresh basil leaves (1/4 cup)
Whole grain bread (8 slices) (1/2-inch thick each)
Finely chopped oil-cured black olives (2 tbsp.)
1 small thinly sliced zucchini
Provolone cheese (4 slices)
Direction:
1. In a small bowl, combine basil leaves, chopped olives and 1/4 cup of mayo dressing with olive oil.
2. Take 4 bread slices and spread the mayo mixture on each bread slice.
3. Make a layer of provolone, zucchini, bacon and peppers on top of the mayo mixture.
4. Cover with 4 bread slices.
5. Apply rest of the mayonnaise on the top side of the sandwich.
6. In a grill pan or non-stick skillet, cook the sandwiches
