BRAAI BURRITOS Friday night favourite
Burritos are easy to make in advance, and you can quickly heat them over the coals for a delicious hot dinner once the camp is set up.
Ingredients
(enough for 6)
2 tablespoons each oil and butter
4 chicken breasts, cut into bite-sized cubes
250 g mushrooms, chopped a handful of baby spinach leaves
1 cup cooked brown rice
salt and freshly ground black pepper
6 large tortillas
6 teaspoons pesto (any kind will do)
500 g mozarella, grated
Here’s how
the oil and butter in a pan and fry the chicken and mushrooms until fragrant, golden brown and cooked. Stir in the spinach and fry until just wilted. Stir in the rice and season to taste with salt and pepper.
