    INTRODUCTION

The lectin free diet is recommended for people who have battled with food intolerance and excessive weight gain all their lives. Lectins are proteins that are found in certain plants and scientists have identified that they cause inflammation, digestive troubles as well as weight gain. Cutting out lectin rich foods from your diet will help you to reduce inflammation, lose weight much more easily and become healthier. Millions of people have done this and it will work for you too!

To succeed with this diet  and get all of the benefits, it is vital to know the foods that are rich in lectin and take them out of your diet. The list of foods to eat and food to avoid is quite long. It won’t be easy going through this list each time you want to eat or cook your meals. It is easier if you have a collection of recipes that are made with ingredients that are free of lectin. This is what The Lectin Free Electric Pressure Cooker Cookbook has done for you.

Apart from conforming to the lectin free diet and helping you to improve your health, these recipes are also delicious. They are easy to cook and contain no hard to find ingredients. The variety of the recipes gives you something exciting to look forward to each time you cook and the little time you spend in the kitchen will give you mouthwatering rewards.

This collection of 60 recipes will assist you greatly in getting rid of lectins in your diet. Each recipe abides strictly to the list of foods that are recommended for the lectin free diet. Additionally, each meal is also cooked in an electric pressure cooker. The pressure cooker  is recommended for cooking foods on this diet because the high cooking temperature effectively degrades lectins that slip through the ingredients in the meal. Even when you try your best to stick to lectin free ingredients, a few stray lectins might be found in some of the ingredients that you use in the meal.

Cooking, soaking, sprouting and fermenting are recommended practices for reducing the lectin content of high lectin foods in order to make them harmless. However, this collection of recipes aims to avoid these high lectin foods altogether. The only exceptions are chili peppers and tomatoes, but you have to peel and remove their seeds before using them in your meals. Simple methods for peeling and deseeding tomatoes and peppers is giving below:

How To Peel And Deseed Tomatoes And Peppers

    Peppers

Preheat your broiler. Place the peppers on a broiler pan about 2 inches from heat. Let broil for about 10 minutes (for chili, poblano, jalapeno peppers etc) and 15 minutes (for bell peppers) turning 3 to 4 times, until the skins are charred. Remove the peppers and place in a bowl. Cover for a few minutes until you can handle with your hands. Peel the peppers, cut open and discard the seeds. Chop or slice the peppers as the recipe demands. You can make a batch of this and keep in the fridge for several days.

    Tomatoes

Choose tomatoes that are fully ripe. Add water to a pot and bring to a boil on the stove. Remove the tough green stem and cut an X on the bottom of each tomato. Add the tomatoes to the boiling water for 40 to 60 seconds. Remove the tomatoes and immediately drop in a bowl of ice water. Remove from the ice water and peel the skins with your fingers or a knife. Slice each tomato in half crosswise and squeeze gently to remove the seeds. Use the tip of a knife to ease out any hidden seed.
