Chapter One: Breakfast

Cornmeal Porridge

Makes: 2 servings

Ingredients

●  ½ cup fine yellow cornmeal

●  ½ cup milk

●  Sugar to taste or fat free condensed milk

●  1/8 teaspoon ground cinnamon

●  ½ teaspoon vanilla extract

●  1 ½ cups water

●  1/8 teaspoon ground nutmeg

Method

Add cornmeal and ½ cup water into a bowl and mix well.

Pour milk and remaining water into a saucepan. Place the saucepan over medium heat.

When it begins to boil, add cornmeal mixture and salt. Stir constantly.

Lower heat and simmer for 5-6 minutes.

Add rest of the ingredients and stir.

Ladle into bowls.

Serve
