    Ingredients:

    5 Cups of button Mushrooms

    1 Medium red Onion – Chopped

    1 Medium Carrot – Chopped

    ¼ Cup of Tomato Pieces – Dried

    ¾ Cup of Chicken Broth – Reduced Sodium

    3 Tbsp. of Tapioca – Quick Cooking

    1 tsp. of Dried Thyme – Crushed

    ½ tsp. of Dried Basil – Crushed

    ½ tsp. of Salt

    ¼ tsp. of Pepper

    12 Small Chicken Thighs – Skinned

    3 Cups of Whole Wheat Fettuccini Noodles – Cooked

    Fresh Basil – Snipped

    Directions:

    In your cooker combine the onion, mushrooms, carrot, and tomato pieces. Add the chicken broth. Sprinkle the tapioca on top with the thyme, salt, pepper, and dried basil.

    Cover it and cook it on low for 7-8 hours or on high for 3 ½ - 4 hours.
