Cyndi has been cooking from an early age. She and her sister would mix up flour and sugar on the couch to practice making a cake, at the ages of 2 and 3. She helped her mother in the kitchen while growing up. Over the years she has cooked and baked quite a few meals. Her husband claims that she has only made 3 lousy meals in the 14 1/2 years that they have been married. That is a pretty good average since he claims to be a picky eater. For this reason alone, these recipes should be considered good.

    Apple Dip

    1/4c.Brown Sugar

    1 Pkg. (8oz) Cream Cheese

    1tsp.Vanilla

    1/4c.Sugar

    1c.Peanuts (Optional)

    1/2c.Mini Chocolate Chips

    Apples (Sliced and Dipped in Lemon Juice)

    Beat all ingredients together, except peanuts and chocolate chips until well blended. Sprinkle the peanuts and/or chocolate chips on top, if desired. Makes 1cup.

    Serve with the apples.

    Artichoke Spinach Dip

    1 Pkg. (10oz) Spinach, Chopped, Thaw, Drain

    1c.Mayo

    1c.Sour Cream

    1c.Grated Parmesan Cheese

    2 Cans Artichoke Hearts, Chopped

    1/8tsp.Red Pepper

    1/2tsp.Garlic Powder

    1c.Monterrey Jack Cheese

    1/2tsp.Onion Powder

    Loaf of French Bread, Tortilla Chips or Crackers

    Preheat oven to 350º. In a mixing bowl, mix all of the ingredients together. Spray a casserole dish with cooking spray. Pour dip mixture into the dish. Bake for 20 minutes or until heated all the way through. Makes 2 1/2-3 cups.

    Berry Dip

    1c.Fruit

    3/4c.Vanilla Yogurt or Flavored with Fruit of Choice

    1/2tsp.Cinnamon

    1/4tsp.Nutmeg

    1/2 Container Whipped Topping, Thawed

    8oz.Cream Cheese

    Dipping fruits:

    Fruit Wedges, Pear Wedges, Whole Strawberries, or other Fruit

    First blend the 1c.fruit in a blender and then mix in the remaining ingredients. Serve with the cut up and whole fruit. Any fruit that will brown dip into lemon juice, before using.

    Cheese Stuffed Bread

    1lb.Unsliced Hard Crusted Bread,

    1lb.Monterey Jack or Semi-Soft Cheese, Sliced

    1/2c.Butter, Melted

    1/4c.Green Onions, Minced

    1tsp.Garlic Powder

    1-2tsp.Parsley Flakes

    1tsp.Onion Powder

    Cut bread lengthwise and width wise without cutting through to the bottom crust. Insert cheese between cuts. Combine remaining ingredients; drizzle over the top of the bread. Wrap in foil, place on a baking sheet. Bake 350º for 15 minutes. Unwrap; bake 10 minutes longer or until the cheese is melted. Makes 6-8 servings.

    Chipped Beef Dip

    1 Pkg. (8oz) Chipped Beef, Chopped into Small Pieces

    1 Pkg. (8oz) Cream Cheese

    1c.Sour Cream

    1/2c.Mayo

    1/4c.Dried Onion, Minced

    1/2tsp.Garlic Powder

    Dash of Pepper

    1/2tsp.Dill

    1/2c.Pecans, Chopped

    Blend all ingredients together except the nuts. Put covered bowl in the refrigerator overnight. Before serving, sprinkle the top with nuts. Serve with crackers and/or bread. Makes 2 cups.

    Cranberry Orange Fruit Dip

    1 Container (8oz) Sour Cream

    6oz.Cream Cheese

    1/2c.Cranberry Orange Relish

    2Tbsp.Honey

    1/8tsp.Dried Orange Peel

    1/4tsp.Cinnamon

    Fruit:

    Strawberries, Orange, Apples, Pears, Pineapple, Grapes, Kiwi, Banana

    Stir together all dip ingredients in a bowl. Cover and chill until serving time. Cut fruit into chunks. Toss apples and pears into lemon water to prevent excessive browning. Cut kiwi into 1/2" slices, cut slices in half. Can be made into a kabob or eat the fruit and dip separately. Makes 1 ½ cups.

    Creamy Pesto Tomato Dip

    1 Pkg. (8oz) Cream Cheese

    2 Roma Tomatoes, Diced

    1/2-2/3c.Italian Blend Shredded Cheese

    1/4-1/3c.Prepared Pesto Sauce or Italian Dressing

    Box of any flavored Triscuits

    Preheat the Oven to 350º. Spray a small casserole dish with cooking spray. Place cream cheese, pesto, and tomatoes in the casserole dish. Top with the shredded Cheese. Cover the casserole dish with foil and bake for 8-10
