PROLOGUE
Before publication, this book was reviewed by two critics—one a technical writing expert, the other a professional chef. The writing professional concluded that the book was an interesting contribution to the field, that the scholarship was sound, and that it was written in a readable style.
The professional chef totally disagreed. He had numerous criticisms, the primary ones being that the recipes were apparently not originally written by the author and that the book is directed at the home cook and those curious about tea in cooking, rather than at professional chefs and serious cooking enthusiasts. He also recommended that the recipes be reviewed by an unbiased panel of professional cooks
—a time-consuming and very expensive procedure.
Guilty as charged. Most of the recipes are relatively simple and easy to handle. They were not tested by a group of chefs in a restaurant kitchen, but in the small kitchen of our New York apartment and in the kitchens of those who sent me the recipes. If the recipes are written in different styles, it is because thy were contributed by a large number of tea enthusiasts who also enjoy experimenting in their own kitchens.
In short, if you are a professional chef, don’t buy this book. However, if you love tea and you enjoy cooking and you like to try something new, this is exactly the book for you. It’s a fun cookbook.
