Introduction
Canning is a safe and thrifty way to preserve high quality food, year round from the comforts of home. Canning and preserving your own food can easily save you half the cost of purchasing your food from the store. Many people find it very rewarding to have a level of self-sufficiency when it comes to the food they eat. Canning and preserving your own foods can give you a great deal of satisfaction knowing that you and your family are eating healthier, and saving money at the same time.
The large amounts of water in fresh fruits, vegetables and animal foods means they are very perishable. They will spoil and lose their quality for many reasons:
Growth of molds, bacteria and yeasts
Food enzyme activity
Oxygen exposure
Loss of moisture
Most produce begins to lose a large amount of its nutritional value once harvested. A big portion of the nutrients will be lost within a matter of a few days. Even after refrigerating, over half of the vitamins will be missing in just a matter of a week or two. If you handle and can your produce properly, it can last longer and be much more nutritious that anything sold in local stores.
You will lose a lot of the nutritional advantages of canning your own foods if you begin with low quality foods. When possible, you may even want to harvest your produce yourself to ensure the best quality you can. You also lose many benefits, and can even jeopardize anyone eating your produce if it spoils because the jars failed to seal properly or the food inside spoiled from improper processing or deterioration because they were stored too long. You can also face botulism poisoning if you are not careful to properly process your
