Why I wrote this book
I came into the world born into a Eurasian family in North London, United Kingdom, something I hold on to because I have felt my heritage to be neither here nor there, but in fact everywhere; I never really realized that some of the things we were eating at home were known to be Eurasian food. Being truly international I assumed the recipes were Asian or Burmese, Chinese or Portuguese food; rather than this magical blend of many cultures.
Some of these dishes are among my family favourites to eat. Mum gave me a file of recipes that she collected over the years. Many of their family friends used to visit our house to eat the food my mum or dad cooked.
There is nothing that comes near to this book, with the 85 selected recipes inside, mainly because it covers both Burmese and Indian food, and that is just a few to mention. There are fewer people from my particular background, while others have attempted to produce recipe books, this one is entirely different because of a range of historical dishes. There are recipes for everyone who is adventurous, and it appeals to a few of my vegan friends too.
There are some recipes not necessarily Anglo Burmese or Anglo Indian, but I have added them because some of the dishes originated from these countries. Thank you for purchasing this book, and I hope you find it useful.
Introduction
Eurasians of Europe are also known as Anglo-Burmese, and there are various Burmese ethnic minority groups in the country. Prior to the Second World War, there were also Anglo-Indian residents living in Burma. Together, these Eurasians were specifically recognised as persons of mixed ancestry or dual ethnicity, originally with one of their parents being of ethnic Anglo-Saxon and ethnic Burmese or ethnic Indian; intermarriage between British officials and locals during the colonial rule. Descendants would be classified as Anglo Burmese or Anglo Indian.
These communities can be traced back centuries due to the arrival of the Europeans into Burma and India, to trade spices. The combination of European and Asian cultures became a distinctive culture of their own, which is the new colonial population of Anglo-Burmese and Anglo-Indian heritage.
The Anglo-Burmese and Anglo-Indians were more Anglo
than Burmese or Indian
. Their mother-tongue was English, and so were their religious upbringing; as were their customs and family traditions. While the majority married within their Anglo-Indian circle, there were those who continued to marry expatriate English or Europeans. Very few, if any, married Indians.
Furthermore, Burma has never really been a part of India
besides its cultural-geographical subcontinental area. It was part of British Burma; a large province that was influenced by India, but culturally, linguistically and ethnically very different from the rest of India.
Nevertheless, when the British initially resided in Burma and India, they lived without the families but used eat similar food to back at home in England; mainly salted r smoked, boiled meat beef or mutton, chicken, pork, duck etc., stew, mash, bread, pies, white soup, and mostly pudding and custard for dessert. It was when the majority of British, later on, hired Burmese or Indian cooks, and the flavours developed and progressed from then on. It was this practice that progression led to new dishes being invented.
Therefore, food evolved from the combination of history, practices, cultures and spices, which remained a legacy in a whole range of wonderful dishes and a symphony of flavours among virtually all Eurasian dishes.
BURMA (Mayama)
Burmese Food
Burmese food is delicious, and a good way of knowing whether Burmese or Indian food is unhealthy, of poor quality or high in calories, is to look at the population that eats such traditional cuisine simply. Does the population of Burma have high obesity rates; is its general population unhealthy? If the answer is no, then it’s very likely that Burmese food is reasonably healthy.
Gluten-Free Food
The trend these days is gluten food. It appears that most of the staple foods eaten in Burma (Myanmar) are, basically, gluten-free. There is a wide assortment of rice and noodles, with a few exceptions of wheat noodles, there are noodles that are gluten-free.
There are reputable bakeries that offer gluten-free products. Nowadays, you can buy gluten-free flour and pastries in some supermarkets.
Traditional Dishes of Burma
One of the most special dishes is tea leaf salad; there are a few cultures that eat green tea leaf as a salad, which is good for you too.
Tea Leaf Salad
This includes green tea leaves (usually pickled), dried prawn, deep fried crispy beans, garlic and fresh tomato. The salad is then sprinkled with salt, lime, fish sauce, and oil for extra taste.
Green Tea
Green tea leaves selected from the farms of the Shan Hills are usually sold in containers such as small wooden boxes, bamboo, or plastic containers. A few are un-treated and practically raw, and others are pickled in oil or lightly salted. Depending on the type of blend
pickle this may include a splash of lime, chilli or other seasoning, but not enough to overpower the green tea flavour.
Deep Fried Beans
Deep fried crispy beans can vary; all types of beans are used. There are double-deep fried beans available to remove any moisture, which makes it crunchy, and adds texture into the mix.
