Creamy Fruit-Filled

Ingredients

Directions

In a medium bowl whisk together egg, milk, flour, oil, and salt until smooth.

Heat a lightly greased 8-inch nonstick skillet over medium heat; remove from heat.

Spoon in 2 tablespoons of the batter; tilt skillet to spread batter evenly.

Return to heat; cook for 1 to 2 minutes or until brown on one side only.

Invert over paper towels; remove crepe. Repeat with the remaining batter to make eight crepes total, greasing skillet occasionally.

Set crepes aside.

To assemble, place crepes browned sides down.

Spoon desired filling onto half of each crepe.

Fold unfilled half of crepe over filling.

Arrange two filled crepes on each serving plate.

Top with desired topping.

Deviled Egg

Ingredients

Directions

In a medium bowl combine hard-cooked eggs, mayonnaise, bacon, sweet pepper, the 2 tablespoons chives, the mustard, and salt.

Make a pocket in each croissant by cutting horizontally from one side almost two other side. Line the croissant pockets with spinach and cheese.

Fill with egg mixture.

If desired, sprinkle sandwiches with additional chives and paprika.

Breakfast Tarts

Ingredients

Directions

For pastry, in a large bowl* stir together flour, sugar, and salt.

Using a pastry blender, cut in butter until mixture resembles fine crumbs.

Stir beaten egg into flour mixture.

Using the 2 to 4 tablespoons milk, sprinkle 1 tablespoon of the milk over part of the flour mixture; toss gently with a fork.

Push moistened pastry to side of bowl.

Repeat moistening flour mixture, using 1 tablespoon of the milk at a time, until flour mixture is moistened. Gather flour mixture into a ball, kneading gently until it holds together. Divide pastry in half; form halves into balls

If desired, cover with plastic wrap and chill until ready to use.

Preheat oven to 375 degrees F.

On a lightly floured surface, slightly flatten one pastry ball. Roll pastry into a 9x8-inch rectangle, trimming as necessary to form straight edges.

Cut in half lengthwise to form two 9x4-inch rectangles; cut each in thirds crosswise to form three 4x3-inch rectangles. Repeat with the remaining pastry ball (you
