Veggie Bowl - Elsa Griffin
Author’s Foreword
Food is essential to life; therefore, make it good.
My love affair with fruits and vegetables started when I was 5 years old, when we visited my father’s farm home in their province, for the first time. So there I was, standing in the middle of my granddad’s vegetable garden, trying to keep myself from getting really excited to run through what were seemingly endless rows of pumpkin patches. I thought to myself; I could live here! I wanna live here!
I remember seeing my grandma turn squash, cabbage, green beans eggplants and sweet potatoes into scrumptious dishes that until now, I am craving for. She once told me that these fruits and vegetables are what keeps us alive and healthy; and that I should always have them as part of my daily meals. Unfortunately, I we had to go back to the city, in the care
of fast foods and not so healthy urban diets. I began to lose sight of what I should really be eating.
Needless to say, I started to gain weight, until I realized that I am 135 lbs. overweight. I was suffering from neuromuscular pains, which means I cannot carry myself well because my weight is putting so much pressure on my bones, joints and muscles. I became a recluse, stayed mostly at home to avoid the stares of other people. One day, I was at a bookstore and ran into my old college friend. After a few chit chats, I’ve learned that she’s now a vegetarian and fitness trainer. Soon she convinced me to go back to my roots – after all, I used to love vegetables and try a meat-free diet. The problem then was, I wasn’t known for being a great cook. So I did a lot of research, tried several recipes and took note of them.
I followed the recipes and paired them with proper diet and exercise, and I began to notice that I was losing weight! So I said, I will go on with this and help people in the process as well. In short, this book is inspired by my struggles, food journeys, adventures, and inspirations, as well as my passion for Asian flavors. And speaking of Asian cuisine, it is probably considered as the most loved yet intimidating at the same time. But with the help of this book, I am positive that you will be a whiz in the kitchen, mixing and concocting your favorite Asian flavors in no time.
