    Ingredients

    For the Stir-Fry

    1 lb boneless skinless chicken thighs

    6 tablespoons cornstarch

    1 large onion, diced

    1 cup frozen peas and carrot

    Cooking oil

    Hot steamed rice

    For the Sauce

    1/4 cup oyster sauce

    1 teaspoon dark soy sauce

    1 teaspoon black pepper

    1/2 teaspoon white pepper

    1 teaspoon rice wine or 1 teaspoon sake

    Directions

    In a small bowl add together all the sauce ingredients then set aside.

    Take the chicken and cut it into small pieces approximately one quarter of an inch thick.

    In a small bowl add the cornstarch and begin to add the chicken, make sure the chicken is covered evenly, shaking off any excess cornstarch.

    Add the cooking oil to a wok and heat until the oil starts to smoke, add the chicken to the oil in batches and cook until golden brown.
