This is the best quote I can think of that describes the wonders of beer. Throughout my life, I have tried beers from around the world, and I never get tired of tasting them. There are so many diverse and tasty variations that I can only hope to continue my search for new and exciting beer offerings. Since beginning this hobby — obsession — I have come to appreciate what goes into creating even the simplest of beers. Our ancestors were chemical and culinary geniuses to have come up with not only the concept of beer, but also the perfection of the practice of creating it.
These ancient people created the first beers at home and, therefore, were the original home brewers. They figured out a way to boil grains, such as barley, until the grains released fermentable sugars. This produced a sticky, sweet liquid known as wort. They allowed this wort to be fermented by wild yeasts that exist everywhere in nature; these yeasts convert the sugar into alcohol and the carbon dioxide into the bubbles found in beer. Later, these beer pioneers began adding other plants to give these simple beers more flavor and body. They used herbs such as heather and — more recently — added the plants called hops. This process of fermenting barley and adding bitter hops creates what we now know as ale.
Whether you are new to home brewing or are a veteran, there are a number of reasons why growing your own ingredients at home is beneficial to the home brewer: You have total control over what goes into your beer and what does not. You have the ability to create completely organic beers based upon the type of gardening techniques you choose. An organic beer is created with ingredients that have been grown without the use of artificial fertilizers, herbicides, and pesticides, and making your own is possible because you will know exactly what is going into your beer. You will be in control from seed to suds. If you are a home brewer, or are thinking about becoming one, here are just some of the benefits to creating your own beer garden:
1. There are good-tasting beers, and there are bad-tasting beers. But what if you could create a better-tasting beer? You can concoct a satisfying beer using a beer kit or store-bought ingredients, but you can create a significantly superior beer when using your own ingredients. A beer kit contains all of the ingredients, such as barley malt, hops, and yeast, that you will need to create a home brew, but it uses premeasured ingredients. By creating yours from scratch, using the step-by-step instructions in this book, you will be using the best ingredients, because they are the freshest, highest-quality ingredients you can find. You can feel motivated to create the best, most memorable beer possible when you are cutting, drying, and preparing your ingredients from scratch.
2. You can grow ingredients that you may not be able to find readily available anywhere else — specialty grains, unique types of hops, or unusual herbs that you can pull fresh from your garden and drop into a boiling pot of brew. Specialty grains are grains that add color and flavors, which add more depth to a beer but often are not fermentable grains. They are added during the boiling process that creates the wort. An example of a specialty grain is a black patent malt. This malt is dark and adds color and a chocolaty flavor that is distinctive in stout beers. Malt is produced when grain, and in this case barley, is allowed to sprout. This releases sugars that can then be broken down by yeast during fermentation.
Some hops are used to add bitterness to a beer. These are added early on in the brewing process as heat converts enzymes in the hops to create a bitter flavor. Examples of hops used to add bitterness are Green Bullet, Herald, and Horizon. Some hops are added later on for aroma. Examples of aroma hops are Aquila, Bramling Cross, and Challenger. Many different species of hops will be discussed in Chapter 4. Each hop adds a different level of aroma and bitterness to a beer. In addition to hops, herbs such as hyssop, juniper, and lavender are used to create unique flavors and aromas in a home brew. In addition, the cost of creating beer using your own ingredients is substantially cheaper. Can you believe that you can make about 6 gallons of your own beer for what it would cost to buy a six-pack of your favorite commercial beer? Chapter 6 allows you to take an even greater level of control by teaching you how to culture yeasts yourself for home brewing. This can drop the cost of your brew even further.
3. You will understand how beer is made and learn more about its evolution. This opens up all kinds of avenues for exploration and experimentation, and allows you to create historical beers, such as Chimay Trappist beer that has been produced by Trappist monks in Belgium for more than 300 years, and use herbs like anise, a licorice-flavored herb that is not commonly used in commercial beers. These can create some unique libations.
4. The process is genuinely fun. Home brewing is an exciting hobby on its own, but combine it with gardening and chemistry, and it is fun, exciting, and a great learning experience. Both home brewing and gardening require patience, intelligence, and an independent, experimental spirit. You may find that it will never get dull because the combination of ingredients will be endless. Each batch will be a handcrafted, unique creation that can impress friends, family, and even judges at beer competitions.
This book is about growing all the ingredients you will need to create a beer in your kitchen, with the exception of adjuncts such as additional sugar used to increase carbonation in the beer. You will also learn about the steps in the process and the necessary equipment involved in brewing your own beer. If you are adventurous, then in Chapter 6 you will learn how to cultivate your own yeast strains for home brew use.
One of the aspects about home brewing that is so exciting is the amount of control over that final beer a home brewer has. Unfortunately, a home brewer can be confined by the hops that are available, the types of malt and grains he or she can purchase from a home-brew shop, and any other flavor additives that a home brewer may wish to add to a brew that are available for purchase. But what if you could go one step further and control the outcome from the beginning?
Although this book contains some brewing techniques and recipes, its focus is on controlling the beer-making process from the beginning: growing the ingredients in your own garden. Various combinations of grains, hops, and herbs can be used to create just about any beer you can taste commercially and even allow you to create new ones that you might never have considered.
With the ingredients growing in your backyard, you can decide to make a lager, an apricot wheat, or even a triple-strength IPA (India pale ale). You will learn how to grow grains, hops, and herbs from seed and rhizome, harvest these ingredients, and store them. Grains have to undergo a special process called malting
in order to be used in the creation of beer, and this malting process will be broken down easily in this book to help you replicate the brewing process used by the big breweries — right in your own kitchen.
Hops and herbs must be dried and stored in a special way. Step-by-step instructions take you from planting to harvesting, drying, and storage. You will have all the instructions you need to create many styles of beer at home easily and successfully, whether you are a beginning home brewer, advanced home brewer, or a gardener who wants to create a one-of-a-kind brewing garden.
For the beginning home brewer, Chapter 8 describes the process of using the ingredients you have grown in your backyard to create a beer that your friends and family will rave about. For the more experienced home brewers, there are more unusual herbs, such as bee balm, and uncommon beer grains, such as amaranth. It is time to put your gardening gloves on, and create your unique beer garden.

Chapter 1: The Components of a Beer Garden

A vast number of fermentable drinks exists that humans can create: beer, wine, liquor, cider, and mead, to name a few. Every one of these beverages has one thing in common: a fermentable sugar as its base. For beer, the sugar that is converted by yeast into ethanol — alcohol — is derived from grains. When most people in the United States think about beer, they usually imagine lagers. Coors, Budweiser®, and other light-yellow lagers are mostly mild tasting, have almost no hop flavor or bitterness to them, and are actually based upon a beer type called a Czech pilsner. These American lager beers are made with corn and rice added as adjunct grains; the central fermentable grain is barley, but these types of beers have a very light barley malt taste to them.
In reality, American lager beers are a little trickier to make than ales. This book will focus on European or early American-style ales, which include a lighter pale ale, all the way to a dark-chocolate stout. The dark chocolate refers to the rich flavor and dark color — not because any actual chocolate is actually added to it, although there are commercial breweries that do add actual chocolate, such as Young’s Double Chocolate Stouts and Rogue Brewery’s Chocolate Stout. As you will learn while growing, kilning, and eventually roasting your own grains, the maltiness and color of a beer depend largely on the degree to which you roast the barley malt.
Grain is the body of your beer garden. You will need about 800 square feet in order to produce enough grain to make either 5-gallon full-grain recipes, which means you will use all of the grain from your garden to produce each batch, or about 30 partial-grain batches, which means you will be using premade malt extract for part of the home-brew recipe. You can plant them in squares or in rows and plant other herbs and hops around them or in the center part of your garden. Certain varieties of barley, such as easy-thresh hulless barley, can grow as high as 3 feet tall.
Barley is one of the earliest cultivated grains known in the history of man. The ancient Assyrians, Egyptians, and people who lived around the Mediterranean region of the world have been growing barley as a food staple for thousands of years. In Europe, barley was used as the main component in bread until about the 16th century, when it was replaced with wheat and potatoes.
Let us now look at the skeletal structure of the beer garden: the hops. Hops give beer the bitterness you may have experienced in ales that you can buy from the store or from your local microbrew pub. Hops are the skeletal part of your garden, growing high up on a trellis system. The trellis system is a series of poles that hop vines are trained up; a traditional trellis system uses wires strung between poles at the end of rows. This allows more hop plants to be planted and gives a greater yield and more control over the height to which these plants grow, which is important during harvesting season so that you can reach your hops without the need for a cherry picker machine. A cherry picker is much like the bucket on the top of a fire truck; it extends by the use of a telescopic pole.
