    A QUEST OF EPIC PORTIONS –OOPS! I MEAN PROPORTIONS

    When I think back to my childhood, one of my favorite food memories was going to that restaurant famous for its all day serving of fluffy, huge pancakes, and devouring a (large) pile of them.  Ever since then, even as a child, I have tried to replicate those light, fluffy, tasty pancakes.

    My journey started off with the premade, just-add-water biscuit mix.  They always came out too heavy, too flat, too gummy, or just too tasteless.  Of course, copious amounts of maple syrup always helped, but that is beside the point.

    I then ventured on to recipe books, and for a long time was satisfied with the results, but they still were not the holy grail of homemade pancakes I was looking for.  I used these for years though, throughout college and the following years.

    Finally, when I ventured in to the realm of becoming a recipe blogger, my eyes were opened to the world of online recipe sources, and they sent me in a direction much closer to what I was looking for, and rekindled my quest for the perfect homemade pancakes.

    I am thrilled to say that I have made dozens upon dozens of pancake batches to perfect the recipe and the method, and these will satisfy you to the point that you will never go out for pancakes again.  Instead, you can hop into the kitchen and create the most light, fluffy, and flavorful pancakes you have ever had the pleasure of eating.

    THE BASICS

    If you only ever make one pancake recipe, then this is the recipe to make.  A lot of times when I would try pancake recipes, they would be flat, gummy, or have absolutely no redeeming flavors.  Well, fear not!  This recipe is light, fluffy, and the flavor is so remarkable that maple syrup and butter are absolutely unnecessary!

    SECRET #1:  EGGS

    When it comes to getting fluffy pancakes, it is all about the eggs.  If you just mix in whole eggs into all of the other ingredients, it leads to those gummy, flat, and dense pancakes that I personally want to avoid at all cost.  To fix that and get light and airy pancakes, the secret is to separate the eggs, and whip the egg whites into medium stiff peaks.  This is a necessary step for success!  Don’t skip it, believe me, you will be so glad you didn’t when they are done.  Once all of the other ingredients are mixed together, then the egg whites get folded in last, and that creates millions of little
