    When we think of women who have made important contributions to science, health and wellness, we think of Marie Curie, Florence Nightingale, Sophie Germain, Jane Goodall and Rachel Carson among many names.

    I think of Dr. Johanna Budwig, a well-respected German pharmacologist, physicist and chemist whose groundbreaking work on fats and the role they play in human health changed… well…everything we thought we knew about fats and the role they play in human health.

    Some sixty years ago, Dr. Budwig discovered that essential fatty acids are at the heart of our losing battle with cancer. Her in-depth studies on the disastrous effects of hydrogenated other denatured fats on human health has shown time and again just how essential EFA’s are to human health and wellness.

    Just as any other expert offering an alternative path to health, Dr. Budwig was, in her professional life, criticized and attacked by those with a vested interest in keeping people sick, fat and dependent on the medical and pharmaceutical industries that thrive on our lack of well-being.

    Healthcare is all we talk about anymore; whether the healthcare bill is worth the paper it’s written on and what-ever other scare tactic news pundits can use to panic middle America about their coverage. But no one is talking about the root of the problem…or its solution: prevention and maintenance of health.

    Everyone, it seems, is missing the point. No healthcare bill can save us from the worst enemy we face…ourselves. I recently had the ‘pleasure’ of being submerged in our system when I fell and broke my wrist. Just sitting in the emergency room of a major metropolitan university teaching hospital was enough to make me feel sick. After seven grueling hours of waiting, a splint was quickly, rudely and badly applied and I was sent home with a note to see a surgeon.

    What I don’t get is why no one is screaming…not over-worked health care professionals, not the huddled masses praying for decent care in our emergency rooms. Why aren’t Americans screaming that we have had enough? When are we going to get sick and tired of being sick and tired? Trust me; there is no pill to cure this!

    I have not lost my compassion. All of this breaks my heart. But unless you are living in a world completely cut off from communication, you know that there are healthier options than fast foods loaded with the kinds of fats that are stealing America’s health. People know that the meat served in these joints is loaded with growth hormones, antibiotics, pesticides and is of the poorest quality imaginable, because it is all subsidized…so it can be sold for cheap. People know all about poor quality fats and what they are doing to health.

    I know a lot of people are confused. When you have Cheerios telling you that they are a whole grain, how would you know they are lying? KFC tells us that grilled chicken is healthier. Than what? Fried chicken? Maybe that’s true, but it sure isnߣt healthy. General Mills now adds a check mark to all their ‘Big G’ cereals to show they contain whole grains and are healthier for your family. Really? Lucky Charms, healthy? With sugar frosted oats, artificially colored marshmallows and 11 grams of sugar in a half cup serving, this is hardly what could be called healthy. Every corporate monolith who wants to do the cooking for you does it…they lie to you. Frosted Mini-Wheats won’t help your child focus in class. Whole grains, like brown rice, quinoa, barley and millet will. Processed, sugar-frosted wheat…well, not so much.

    We are willing to tolerate this revolutionized food because it’s easy and cheap. But it comes at a high price…to our health. We spend less on food today than at any time…or any other people in recorded history. And the less we spend on food, the more we spend on healthcare. When I was a kid in the ’60s, the average household spent around 18 percent of their income on food and less than 8 percent on healthcare. Now, as we cook and eat less fresh food, we spend less than 9 percent of our income on food and close to 18 percent on healthcare. Coincidence?

    So is there an answer? Is there a solution to the crushing epidemics that are turning us into a weak, sick, pharmaceutically-dependent society?

    You are holding a solution in your hands.

    To be healthy in this country we have to resist what have become the social norms. Even Oprah, with Michael Pollan as her guest, kept making her case that we need not give up everything we love to be healthy; that we can still have fried chicken (as long as it’s naturally raised). She is still trapped in the thinking that comfort comes from foods that are not healthy for us; that there can be no decadence or luscious flavor in food that is not inappropriate for human health. Eating a plant-based diet is delicious. Yes, there is work involved. Yes, you have to read labels and be aware of what you put in your mouth. Yes, it may be a little more expensive. But it’s time to grow up and take back ownership of our health.

    Dr. Budwig made a discovery that could have changed the way America’s health evolved. There was and is little money to be made in flax seeds and natural foods. There is a lot of money to be made by burying this information and maintaining the stranglehold that corporate monoliths have on the health of this country.

    It’s past time that Dr. Budwig’s work with flaxseeds, protein and the way we nourish ourselves is brought into the bright light of day. It’s past time that the information desperately needed by Americans is made easily, readily and deliciously available.

    This book, based on sound science and loads of experience is hard to argue with. It is the future of the health of this country. It’s the way back to health for a culture that is losing ground every day. This simple, no-nonsense way of nourishment that can restore our species to robust health and ensure a future free of pharmaceutical enslavement.

    Today, more than 50 years after the inception of he inception of Dr. Budwig’s Oil-Protein Diet, essential findings about our nourishment are based on the ideas of my aunt, Dr. Johanna Budwig (pronounced: yaw-hunnah bood-vig). Few have ever thought about or published about the fundamentals of vital, or what we now term essential, fatty acids that early. Meanwhile, the fundamental positive physical effects of linoleic acid, alpha-linolenic acids and their derivatives are scientifically accepted. In the same way, the health risks related to trans-fatty acids have been proven. Thus, do we need another health cookbook? This question I have emphatically asked myself as one of the heirs of my aunt’s legacy.

    Thousands of books talk about healthy nourishment. However, I am constantly asked whether my aunt’s Oil-Protein Diet, which sold more than 500,000 copies, should be updated, since our eating habits and the supply of food have changed dramatically over the last decades. On one hand, there are enormous varieties of food available every season; on the other hand, there is increasing skepticism about food design, functional food and preservatives. Genetically engineered food, coloring, emulsifiers, pesticides and new processing techniques reinforce our concern of people becoming sickened by their daily diet.

    It is a certainty that today foods with high proportions of hazardous substances are being distributed and that consumers are insufficiently informed about the related health risks.
