    Potato Gratin

    This potato gratin is a classic for any Thanksgiving meal! The dried porcini mushrooms, which are known for their bold and intense flavor, add even more depth to the dish.

    Total time: 1¼ hours

    Serves: 6

    Ingredients:

    2 oz. dried porcini mushrooms

    1 shallot, chopped

    2 garlic cloves, chopped

    2 tablespoons olive oil

    2 pounds potatoes, peeled and finely sliced

    1 cup cashew nuts, soaked overnight

    1 cup almond milk

    1 pinch nutmeg

    Salt and pepper to taste

    Directions:

    Rehydrate the porcini in 1 cup of hot water then drain and chop finely.

    Heat the oil in a skillet and stir in the shallot and garlic.

    Sauté for 2 minutes
