Many people claim that gluten is a mysterious protein that provides elasticity in bread, dough and biscuits. This protein is found in oats, rye, wheat, barley and spelt. This protein is also contained in a lot of other foods and products like: Bran, Bulgur, Modified food starch, Malt, Hydrolyzed vegetable protein and Semolina just to mention a few.

However, scientists and doctors have proven that some people cannot break down this protein due to some defects in the gastrointestinal system. This causes the protein to leak into their blood stream which aggravates or causes some illnesses, such as: Celiac disease, allergic reactions and intolerances. To prevent this, these people just have to stay away from foods that contain gluten. However, there is another group of people who believe that they are healthier and better off staying away from these foods.


You have quite a wide variety of alternatives. The fact that you cannot or do not want to eat foods containing gluten does not mean that you will be missing out on a lot. There are quite a good number of substitutes for foods that contain gluten. Some excellent substitutes are: Amaranth flour, Cornmeal, Buckwheat flour, Sorghum flour, Rice flour, Quinoa flour, Potato starch, Tapioca starch, Millet flour, Soy flour and others.


It is important that you have a stock of vital ingredients to successfully and comfortably cook gluten free meals. Below is a list of vital ingredients you will need to get.

Active dry yeast

Baking powder

Black pepper

Baking soda

Brown or white rice

Brown sugar

Butter, margarine

Canned black beans

Canned diced Tomatoes

Canned pinto beans

Cheese (or nondairy cheese substitute)

Cocoa powder

Cooking oil spray



Dried herbs (oregano, basil)


Fresh fruits Vegetables

Guar gum



Maple syrup

Medium yellow Onions

Milk (almond, rice, soy, or cow)


Potato starch

Sorghum flour

Sunflower seed oil

Table salt or sea salt

Tapioca flour


Vanilla extract

Walnut oil

White rice flour

White sugar

Xanthan gum

Yogurt (soy, coconut, or cow)

One important substitute you need is one for flour. You can’t be using the popular wheat flour because it contains gluten.

Below is my blend of flour. We will refer to it throughout this book as Clover Gluten Free Flour. Mix the following constituents in a large bowl until well combined and store in an airtight container.

2 cups sorghum flour

2 cups garfava flour

4 cups white rice flour

4 cups tapioca flour

4 cups potato starch


Breakfast is assumed to be the most important meal of the day. Most people take the first meal that goes into their system very seriously. In this section you will find wonderful recipes that you can use to start your day. This section offers you a wide array of meals from muffins to bread, pancakes to smoothies and many others.


This is best for those mornings when the need for pancakes is just right.

 2 tablespoons sugar

 1 cup Clover’s gluten free flour

 2 teaspoons baking powder

 1 teaspoon baking soda

 ¹/8 teaspoon salt

 ¼ teaspoon xanthan gum

 ½ cup 1% milk

 2 tablespoons unsalted butter

 1 large egg

 1 teaspoon pure vanilla extract

 Canola oil or butter for frying

1. In a mixing bowl, sift together the Clover’s gluten free flour, sugar, baking powder, baking soda, salt, and xanthan gum.

2. Whisk in the milk, butter, egg, and vanilla until very smooth. Allow the batter to stand 5 minutes

3. In a large, nonstick frying pan, heat the canola oil or butter until hot.

4. Pour about ¼ cup of the batter onto the frying pan and cook until bubbles appear on top of the pancake, about 2 to 3 minutes.

5. Turn and cook until browned on other side. Serve immediately.

Frying a test pancake is a good idea to see if the frying pan heat and the pancake batter are right.


Pancakes are great with the addition of buttermilk. Buttermilk makes pancakes lighter and family and guests will love it.

 1 cup Clover’s gluten free flour

 2 tablespoons sugar

½ teaspoon baking soda

 ¼ teaspoon salt

 ¼ teaspoon xanthan gum

 ½ cup buttermilk

 2 tablespoons canola oil or unsalted butter

 1 large egg

 1 teaspoon baking powder

 1 teaspoon pure vanilla extract

 Canola oil or butter for frying

1. In a mixing bowl whisk together the sorghum blend, sugar, baking powder, baking soda, salt, and xanthan gum until well combined.

2. Gradually whisk in the buttermilk, butter, egg, and vanilla until very smooth. Let the batter stand 5 minutes.
