    I was inspired to write this cookbook when my granddaughter, Aivah, was diagnosed with Celiac disease and a Casein allergy at the age of 14 months. Anyone who has had any experience with gluten intolerance or a gluten allergy will be able to understand what we went through before her diagnosis. Our journey to finding healthy, nutritious foods to feed a small child began with her diagnosis. It has been a frustrating and enlightening experience.

    Since Aivah has a casein allergy, in addition to a gluten allergy, we had to find recipes that were gluten-free AND dairy-free. We found dairy-free recipes, but many of them they contained gluten. We found gluten-free recipes but many of them contained dairy. It was a struggle to find recipes with NO gluten and NO dairy.

    There are a large number of dairy-free cookbooks on the market, but many of these recipes include wheat flour and other types of gluten. There are also a large number of gluten-free cookbooks that use a lot of milk, cream and cheese in their recipes. I couldn’t seem to find gluten-free AND dairy-free in one recipe.

    A lot of the gluten-free cookbooks mention that many Celiacs are also lactose intolerant or have problems with dairy products. If this is the case, I am curious as to why there are so few cookbooks that contain gluten-free AND dairy-free recipes.

    It sounds simple when a cookbook tells me I can just substitute a non-dairy product for the dairy called for in a recipe. Unfortunately, non-dairy liquids such as soy milk and rice milk, don’t always substitute equally for cow’s milk. On occasion, they will alter the flavor of the food. There are times when other compensations or additions need to be made when using non-dairy products. Soy and rice cheese doesn’t melt or taste the same as dairy cheese. I have also found you can substitute chicken broth for milk in many recipes resulting in a completely different flavor.

    Another problem we had with the gluten-free and dairy-free cookbooks on the market was that many of the recipes were aimed towards adult tastes. Recipes for foods such as Chili Rellenos, salads with capers and spicy dishes were normal. Thai food and Tequila-Lime Shrimp are wonderful recipes for adults or older childr4en. My 14-month old granddaughter wanted meat, potatoes, vegetables, breads (she LOVES her bread!) and sweets.

    My search for gluten-free and dairy-free recipes is what prompted me to write this cookbook. This cookbook is meant to give you a basic understanding of the gluten-free, dairy-free diet. I have covered the different ingredients, what they do, how they taste and how to combine them into tasty, nutritious meals that will satisfy anyone from small child to adult. If you are new to the gluten-free, dairy-free diet, it can be very confusing and at times overwhelming. So much to remember, so many new ingredients and the way you are used to cooking is pretty much out the window!
