In recent years, several of our family members and friends were diagnosed with celiac disease or gluten sensitivity. Often, these loved ones had stopped eating out, either at restaurants or when invited for a meal at someone’s home. Why? They were afraid of getting ill from eating food that might be contaminated with gluten. So we decided to create recipes that would be gluten-free, delicious, and enjoyable for everyone.

Recipes in the "Gluten-Free, Deliciously!" cookbook series grew out of a lifelong interest in good health and good food. Gillian Olins and her husband, Peter, have spent most of their careers developing novel therapies for diseases in fields including autoimmunity, allergy, cancer, gastrointestinal and cardiovascular diseases. Gillian was born in New York, but spent much of her childhood in the U.K., where she and Peter both earned their PhDs in biochemistry. Since then, they have made their home in the U.S. and currently live in Fort Collins, Colorado, which gives them access to all the outdoor opportunities that come from living right next to the Rocky Mountains. In 2010, they developed a keen interest in the field of celiac disease and gluten sensitivity which was sparked by family members diagnosed with celiac disease, gluten sensitivity, or wheat allergy. After reviewing much of the information on these topics readily available on the Internet and other media, they realized that much of it was of poor quality, or even wrong. So, they decided to create the website, Ultimate Gluten Free (http://ultimateglutenfree.com), which launched in February 2011. The site provides carefully researched information about gluten-related health issues, useful resources, a calendar of events, plus a nationwide database of restaurants and other businesses that serve the gluten-free community. In many ways, biochemistry is rather like cooking, and Gillian and Peter are avid cooks. Most of the meals they prepare at home are reliable family recipes, but occasionally they will experiment with something more adventurous. The recipes in their “Gluten-Free, Deliciously!” book series are clearly written, easy to follow, and have become favorites with many of their family members and friends.

    Who Should Buy This Book?

    We gave a lot of thought to how we might help people who care about gluten-free food.

    These days, many of us have busy schedules and time is precious, so we often rely on frozen dinners, fast-food takeout or eating out. However, the cost of prepared foods doesn’t always fit everyone’s budget. Also, a small percentage of people with celiac disease are super-sensitive to gluten and have to be extremely vigilant in the preparation and choice of meals.

    We believe people on a gluten-free diet should not have to compromise: meals should be delicious, nutritious, and easy to prepare. We wrote this recipe book with these people in mind:

    * A person who has been diagnosed with celiac disease or gluten sensitivity.

    * A caregiver who cooks for a family member or loved one with one of these conditions.

    * A host who wants to make sure that a meal will be safe for guests, while still being delicious for everyone else.

    * Someone who is curious about gluten-free food and would like to try a few recipes.
