I completed and have sustained a healthy whole food, plant-based lifestyle since the community Mercersburg, PA Engine 2 challenge held in 2010. As a plant-based cook, I earned a position as a finalist the last three years that Pennsylvania held their Vegetable Cook-Off competitions. For over seven years I have shared my experiences, knowledge and skills as a health food coach and presenter for our local healthy eating adventures as well as coaching individuals to live a healthy lifestyle. I prepare my food and take my own food photography. I began my formal education as a physical education and health major. I received a BA from Franklin and Marshall College, Lancaster, PA and an MBA from Shippensburg University. To satisfy my creative artistic right brain, I earned my Diploma from London’s City and Guilds in Patchwork and Quilting. I continue to take courses and workshops to hone my photography skills. As an entrepreneur I set up an e-commerce business Piecemaking LLC over 17 years ago. I work as a studio artist and have designed award winning contemporary quilts. Before becoming a studio artist, I taught college and worked in the corporate world as a multimedia developer. You can find me cooking in my kitchen or in the studio quilting or taking food photos or writing cook books.

Get back to basics with recipes from ON TARGET WITH COACH BJ. Remember your grandma’s words, eat your veggies. Eating plant-based will allow you to eat a lifetime of colorful delicious meals, resulting in a better quality of life. My mission as COACH BJ, a plant-based health food coach, is to help you to individualize your healthy eating so that you too can be on the plant-based team of life. I hope to make this transition easier for you as you join my team by preparing easy-to-make recipes.

COACH BJ’s philosophy is to make plant-based cooking fun! My recipes are made with the home cook in mind - no need to be a professional chef. Hey, if I can cook plant-based, anyone can learn. Make plants the main attraction - not just side dishes. Plant-based foods include whole grains, vegetables, fruits, beans, legumes, nuts and seeds - back to the earth, back to basics.

How did I become a whole foods, plant-based cookbook writer? My husband Tom, who is my cooking partner, and I felt that many vegan cookbooks lacked some important elements - some recipes contained too many processed ingredients, many took forever to prepare, some ingredients would sabotage wellness (oil, salt, sugar) and far too few listed nutritional facts. Our dilemma on our journey became how to prepare healthy food that would sustain this new way of eating, given our modern lifestyle. At that juncture I decided to go back to basics by revisiting traditional and comfort type food recipes at a foundation but making original easy-to-prepare plant-based recipes with a healthy twist plus adding unique ethnic dishes. Thus On Target with COACH BJ cookbook was born.

NOTES ABOUT MY COOKBOOK: Many ingredients can be substituted between fresh or frozen, depending on time constraints and availability. Select frozen or canned foods with no salt added for optimum health benefits. For non-dairy milk, I used almond non-sweetened to prepare these recipes and calculate nutrition facts, try your preferred favorite. I used a variety of grains and other ingredients to show the range of wonderful foods available, again try your favorites and you will still get outstanding results. For the pressure cooker recipes, I used a 5 quart pressure cooker on an electric stove, read your manual to adjust recipes to match your pressure cooker and heating source. Recipes are to be used as a guide, just have fun!
