CLEAN UP YOUR DIET
CALAMARI SPAGHETTINI
SERVES: 4 // PREP + COOKING TIME: 25 MINUTES
INGREDIENTS
750 g small calamari or squid
1/3 cup (80 ml) lemon juice
400 g spaghettini
1/2 cup (125 ml) extra virgin olive oil
2 cloves garlic, crushed
1-2 large red chillies, sliced finely
2 tsps lemon rind, finely grated
2 tbsps chives, finely chopped
METHOD
1. To clean and prepare the calamari, remove the tentacles from the body (hood) by pulling gently. Also remove the black beak from the centre of the tentacles.
2. Remove the clear plastic-like quill in the hood and any internal organs. Cut out the two fins from both sides of the hood, then carefully pull away the dark membrane on the outside of the hood and fins. With a sharp knife, cut down one side of the hood and open out. Score the inside of the hood and the fins with fine diagonal lines in a crisscross pattern, being careful to only cut halfway through the flesh. Halve lengthways, then cut into 2 cm-wide strips.
