Salmon is rich in astaxanthin, a powerful antioxidant that gives salmon its pink colour. Astaxanthin has been shown to reduce the risk of heart disease, improve blood flow and decrease oxidative stress. In addition, several studies have reported that this antioxidant may lower inflammation and pain associated with the autoimmune disease rheumatoid arthritis.
