A meal made with LOVE

ROAST ROSEMARY CHICKEN AND MUSHROOM

Preparation time: 15 minutes Cooking time: 40 minutes Serves: 4

INGREDIENTS

800 g chicken thighs and drumsticks
Sea salt and freshly ground black pepper to taste
2 garlic cloves
2 tbsp olive oil
5 sprigs rosemary
250 g button mushrooms
1 cup chicken stock
Fresh rosemary to garnish

METHOD

Preheat the oven to 230 °C and season the chicken. Crush garlic and smear onto the flesh. Place the chicken skin side up in an oiled roasting pan. Tuck in the rosemary sprigs and roast for 30 minutes. Cut the mushrooms into quarters and add to the chicken, together with the stock. Roast for a further 10
