ONE-PAN SALMON AND PEA RISONI

Grab a can of red salmon from the pantry to make a weeknight winner. Ready in 35 minutes, this creamy pasta is loaded with peas and spinach.

SERVES 4 PREP 15 mins COOK 20 mins

50g butter
1 small brown onion, finely chopped
2 garlic cloves, crushed
1 tbs plain flour
500ml (2 cups) milk
500ml (2 cups) chicken stock
305g (1½ cups) dried risoni pasta
150g (1 cup) frozen peas
2 tbs basil pesto
1 tbs lemon juice
415g can red salmon, drained, skin and bones removed, flaked
