Coconut bundt cake

SERVES 10-12

Preheat oven to 180°C. Grease a 25cm bundt pan. Place 250g diced and softened butter and 1¼ cups caster sugar in the bowl of an electric mixer. Beat until pale and creamy. Add 4 extra-large eggs, one at a time, until well incorporated. Add 1 tsp vanilla extract, mixing well. Fold in 1¾ cups plain flour, 3 tsp baking powder, ¼ tsp baking soda and ¾ cup desiccated coconut alternately with 1/3 cup sour cream, until batter is smooth and well combined. Spoon half the batter
