Carrot and coriander soup
On a cold evening, when there isn’t much in the fridge, or you simply have little time, this will fill you, and everyone around you, up well.
SERVES 4 PREP 10 mins COOK 20 mins
✱ 1tbsp sunflower oil
✱ 1 onion, chopped
✱ 1 clove of garlic, peeled and sliced
✱ 1tsp ground coriander
✱ 450g carrots, peeled and roughly chopped
